On a side note: I find it interesting that from a country with under 10% Christianity we get 3 Christmas videos but in the USA (65% Christianity) we can't mention Christmas anymore for fear of alienating the other 35% of the population. Why do you layer the duxelle on top of the salmon instead of around the salmon? Is it because inside the salmon might turn out raw?
