My sister and I tried this recipe, and we doubled it to make 2 but my sister forgot to double the measurement for the evaporated milk (she put in only 5 tbsps instead of 10!) but the leche flan still tasted and looked NORMAL! The mixture wasn't enough for 2 pudding molds or small "llaneras", though - we were only able to fill 1.
I'm wondering whether less than 5 tbsp of evaporated milk would be good enough for one portion? The leche flan we made today was very rich, very creamy but also quite firm. I'm guessing more evaporated milk would make a silkier and more "melt-in-your-mouth" texture?
Also, we baked it in an oven (170 degrees C) with a water bath for 25mins and it came out perfect and soooo smooth.
Hi! Sounds great! Not sure what size llanera you used but the one we used was 2.5 inches in diameter. If you use one that's bigger than that, then yes, it won't be accurate. And yes, the less liquid you add, the creamier but firmer it will because of the yolk. :) Thanks for visiting and watching our videos. :)

Hello, when you cover it with aluminum foil, I have to put it in the oven or in the fridge.

Hello! The sugar will caramelize as it cools down so just set it aside. :) Regarding steaming minutes, if you watch until 0:37, you'll see that it says 20 minutes. I heat the sugar but instead of melting, it burned. My mom said I should have put a little water along with the sugar to make a syrup and caramelized it. Your procedure did not say add water, not good for noobs like me
Hello! You can certainly add water to your sugar but we find it takes longer for the sugar to caramelize when you do. What you can do for the next time you try it without the water is to be vigilant and to swirl the sugar once the edges start to melt. Hello! You just might need to steam it a little longer. Ours took that much time, yours might take longer or less time. Also, leche flan is best chilled so if it was chilled and it was still not firm enough to hold its shape, you need to steam it for at least another 5 minutes. :) Good luck! I made this yesterday. It was not creamy. And the texture when i cut into it isn't "flan-ie" (flan-like, hope you get what I mean). I don't know what went wrong. I followed this recipe EXACTLY. Should I have whipped the egg mixture?? Should I have PREHEATED the steamer? (Because that, I did not). Anyone know what went wrong?
Hello! Hmmm.... not sure what went wrong since this has the same exact ingredients as a normal leche flan, just scaled for one serving. We made this several times in fact during both the testing and the video shoot and it came out like a leche flan every time. No, don't whip since you do not want bubbles. Just blend the egg with the two kinds of milk with a spoon like in the video. :) Did you happen to use an entire egg with the egg white? If so, that would make your flan less creamy. Hope that helps. Also, preheating the steamer is always recommended as with most cooking appliances unless otherwise stated in the recipe. :) However, we don't see how this can affect your leche flan since its covered with foil to prevent drips other than increasing the amount of time it would take to cook.

Hi! If the mixture was watery, you probably didn't steam it long enough. The mixture should be steamed until the edges are set and the center just a little jiggly. Also, since you doubled the recipe, it should take longer to set. Was the size of the llanera used the same as we used? We used a 3-inch round llanera, and it took around 20 minutes for our steamer to cook the leche flan. We actually tested this recipe 6 times and all 6 times, the recipe worked just as stated. :) As with ovens, stoves and other kitchen appliances all operate differently and so, recipe times are usually a guide, not the rule. Recipes, after all, are a guide for how we did it, and unless your kitchen is exactly the same as ours, recipe times may differ from one kitchen to the next.
