I’ve never actually followed a flan recipe… I just add what I think it needs and comes out great… I’ve added cream of coconut and cream cheese to it before and omg that’s my fav way to have it… but you have to make sure there’s no lumps from the cream cheese

I can't tell you how much nostalgia I felt looking at that. My childhood is a mixed bag but my stepmother was one of the few positives. She came from Colombia and the reason I cook today. My memory may be spotty at times but this reminds me how I saw it being made when I was nine. She didn't make it much as she found out my brother and I ate thres leches quicker.

Some other video said to not stir sugar and just pour into mold immediately once melted completely. I'm afraid of messing up the thing Mind trying this trying this out so I don't have to waste sugar?
You can also use smaller cups with brown sugar on bottom. It will look exactly the same when you flip them. This way, everyone gets their own individual flan.

People saying its Filipino. No it is not, the filipino one uses egg yolks and is more creammy than solid, kinda like a creme brulee. The recipe from the video is actually a Portuguese recipe (which was also passed down to Brazil) from the 16th century: "Pudim de leite". It was created in the monasteries and uses full eggs and some variations add a bit of flour. Modern recipes use condensed milk in replacement for milk+suggar.
There is so much flan in my feed, I didn’t even search for it it just keeps popping up, I think it’s a sign from the baking gods.

There are air bubbles in that. Which means your oven got a little too hot. You always bake at around 150C.

to make the texture even smoother you can change the yolk ratio.
Just use eggyolks only for super smooth & creamy textures. I made it a few times already & so much satisfied with the result.
