    but how many sugar do you put into the brine, because i can hardly understand

    You can't sear in juices. The browning process adds flavor, but doesn't actually keep any of the meat's juice from escaping. If anything, the extra cell damage from searing causes more moisture loss, not less. There have been tests that confirm this, one of which was conducted on a Good Eats episode several years back.

    Searing doesn't actually seal juices in. It does caramelise, though, which is what you want. Might give this a try once I get ahold of a BBQ.

      gekko56 Actually it doesn't. It's a myth which people have been spreading for ages. It makes intuitive sense, but it's actually not true. Alton Brown debunked it in an episode of Good Eats, and you can find loads of info about it online. How juicy a piece of meat is depends on the temperature the meat is, which'll vary depending on the method it's cooked with. For example, if you fried a steak, then oven-roasted (without searing) an exact copy, the oven-roasted steak would have more water content. However, it would also be less tasty, as caramelisation is a big part of what makes a piece of meat good.

      DJ BBQ doesn't indirect heat only dry more?I thought Chicken can be made on high, very agressive heat for a very short time to preserve juiciness? Im confussed now...

      Over cooking dries out your meat. Indirect helps ensure you cook your meat all the way through. It really helps for large cuts and for meat on the bone. Plus, if your heat gets too aggressive(flare ups) and it stars to burn, you've got a safe zone to move your meat.

    Is there a problem when I will let it more than 10 minutes on the indirect heat?
    Is it getting dry?
    Because everywhere you hear that chicken should be cooked/roasted very well.

      Hey Firefoley, Overcooked meat if put on "Direct heat" to long will create big charcoal marks which is known to be bad for your body.
      "Indirect heat": is the same as an oven which will in turn make your meat more chewy and dryer. This is because the sugars and proteins they get fused together, making them difficult to cut, chew, and digest. Which if you eat too much of will have an effect on you body.
      Also: chicken should never be eaten raw/rare/medium because of harmful bacteria., its the same with every bird like: turkey, duck and quail.
      Meats like steak can be eaten raw/rare/medium because the contain less bacteria that are harmful to us. (if eating raw/rare/medium steak be certain that your meat is fresh and not over a week old).
      Most type of fish like tuna/salmon/herring can be eaten raw as well. Make sure that the fish are fresh.

      Steve Macleod thats possible yes but salmonella will exsist in the digestive system, so as long as that stays intact. there is no problem but for safe mesurement boil the chicken for 30 secs in boiling water before cutting the chicken breast. this will remove any possible salmonella on the chicken. then you can cut it into tartare cubes.

    Could you do a program about grilling a sow belly with the buttons on? A boar belly with the skin crispy and smoked all day would be a winner too. Brits don't know too much about eating lower down on a hog. I call it class denial, but that's another day.

      Don't put chicken into a hot brine. I added ice and then let it cool down before adding the raw chicken.

    The recommended amount of salt is excessive. The resultant chicken is very salty. Overall, the soaking idea is sound but reduce salt in brine by 90%.

      of course not .. personally, I would make lesser amount brine so not to waste a lot of it after soaking the meat .. maybe enough to cover the whole amount of meat

      Saeed Mohammed I can't see why not. You took out raw..you put in raw. No cross contamination. The salt ratio might be off but other than that no issues.
