      My Czech/German (Bavarian)grandparents didn’t make many main dishes. We made Christmas cookies called Springerles and a 3-tiered braided bread called hoska. Thank you for sharing.

    I lived in Deutschland for six years, 1983 - 1989. Schweinfurt. Fell in love with the people (okay, girls) and the food. And the nightlife (c'mon, I was 18 when I got there). Always impressed with the German peoples' command of English language. We are so provincial in the US, and very few people are bilingual comparatively.

    Thank you for doing these videos. My grandma was German my mom didn't remember all her mom recipe over the years. One of the few recipe she made was German potatoes salad. My one auntie is from German but she has always lived in other states or out the country since my uncle was in the air force

    Suggestions:
    Salt meat before putting on mustard
    Tuck in sides when rolling, no cheese squeezeout!
    Try the two chopsticks method to slice meat evenly

    I love roladen and make them, our grocery store often sells the meat already cut....which is a bonus! My Canadian husband loves them as much as I do! Thank you for sharing!

    I do my rouladen the same. But when I make the gravy I was taught to put cream into it and an extra teaspoon of mustard. It’s one of my favourite dishes.

    This is my family's absolute favorite meal! We make Rottkohl, Rouladen, and Klose. For dessert, we have Kugelhof. I use breakfast steaks.

    Hi Anja....do you know the little trick that is useful for getting meat to slice more thinly more easily? Put your block of meat in the freezer for about an hour until it is stiff but not frozen through. It will slice much more thinly and stay together well to be easily rolled. Thanks for posting this recipe... Your dinner looks delicious!

    A tip you may find helpful is to semi freeze the slab of meat first. It is easy to then cut super fine slices from it.

    Oh my goodness. I love rouladen. My granny used to make it but just put carrots in the meat cause my Mom didnt like all the other stuff in it. We have a German restaurant here and i am going to order rouladen for take out next week. I miss her sauerbraten and red cabbage also.

    I made this tonight and it was excellent! I used turkey bacon since we don’t eat pork, I used almond flour instead of wheat and cognac instead of the red white because that’s all I had and it turned out great! I made roasted broccoli on the side. Very filling and worth the 2 hours it took me 😆

      You can use the cheapest cut you can find because it is braised for a couple of hours making it very tender.

    I have eaten this before but my mother never put the Dijon mustard or gherkins in them. 1 set of my grandparents came from Germany and the other from Yugoslavia and Hungary. I love German food!! Oh and I use white sewing thread to tie up the rouladen. Thank you for this video.

    I've never tried this dish. The ingredients sound wonderful and I'm certain my husband would really enjoy those flavors together. Now I have something new to try! Thank you. And with such fierce looking kitchen tools close by, he might actually wait until it's on the plate to sneak a bite. 😊

      My dad was in the Army and we lived in Germany when I was young. Mom would fix this often with potato balls stuffed with browned bread crumbs. I try to keep this recipe going but we used Steak-umms. They may be a little thin, you could probably use 2 and mom would spread mustard , a slice of pickle, a slice of cooked carrot, garlic and bacon crumbs. It was so good. Thanks for sharing, it brings back good memories.

    Thank you Anja. My Grandmother and Mother made this for us...really brought back memories of a delicious meal. They always served it with red cabbage too.
    On a different subject, are you familiar with a product called "apfelkraut "? An apple spread? I have been unable to find it here. I still have an original tin of Reinsches Apfelkraut..empty now, of course! I would love to find it. Anyway, thanks for a delightful video.

    Leeks need to be sliced lengthwise and thoroughly rinsed between the layers which contain a lot of hidden dirt - this is FoodSafe level 1 in Canada. Oil for shallow frying does not need to be preheated (risk of burning oil) but the vessel does need to be preheated before adding the oil. Tomato paste is very bitter and should be cooked through to slightly caramelize and bring forth the sweetness before adding the stock and not added at the last minute. Otherwise this looks nice. I like how you use gherkins instead of dill pickles which makes more sense to me. I see many people using raw bacon. I would prefer to partially cook it first to render some of the fat.

    I really appreciate your German recipes! Thank you! The recipes of my husband's family have been lost, since so many members have passed away over the years. Hopefully some your recipes will be similar! He often speaks of a potato " very thin pancake" like...... It was made of at least potatoes, his grandma would make it, possibly put sauce on it.. apparently its not a hash brown, or the potato pancakes we see in the stores, all shredded potatoes..any ideas what it might be? Thank you.

      I think Martha Stewart and/or Ina Garten have a recipe for potato pancakes. Not at all like hash browns and often served with sour cream or applesauce.

    I’m from Poland so our kitchen is very similar to yours. Our recipe is similar.
    I have the question why are you cutting meat along the grain instead of against the grain. I was always told to cut the meat otherwise so it’s more tender. Just curious.

    So this is interesting. Been watching a few of these video's on Rouladen and they are all "beef rolled logs" My very German grandmother made Rouladen and it was an event but it wasn't rolled logs it was meatballs. Also the bacon was always fried and crumbled, the pickle and such was diced. Wondering if its a regional thing

      @@OurGabledHome Follow up on this. Spoke to my sister who had all my Grandmothers Recipes translated from German to English and she said the reason everything was chopped up was for us kids. As far as taking steak and tying it into meatballs that could just be her thing.

    I made the rouladen much the same way but after browning them I put them in my slow cooker. I add the sauce too. The meat absolutely falls apart and I don’t heat up my kitchen in the summer.

    Nice recipe, very straight forward and easy to follow but nearly half the video is that tedious prologue. I think most viewers want to get straight to the recipe.

    This is very nice but you are talking too much and you need to focus on the recipe , any body can handle the beef cutting by his own way . Thank you for sharing your recipe
