    ⭐️BASIC GRANOLA RECIPE
    2 cups oatmeal - not quick cooking instant
    1/2 cup brown sugar
    1/8 cup water
    1 tsp vanilla
    1/2 tsp salt - or to desired taste
    *optional 1/2 cup chopped walnuts or other nuts
    Dissolve brown sugar in water by microwaving and stir until melted. Approx 1-2 minutes in my microwave. Add vanilla and salt to liquid. Add chopped nuts to oats then stir in liquid mixture. Spread out granola on parchment lined baking sheet. Kind of crowd them in the pan. Bake at 275 for 45 minutes to an hour. Let cool completely before breaking up. Store in air tight container.
    If I made this version again, I would try adding some oil in. It's a little dry.
    ⭐️DELUXE GRANOLA - You might want to double this for a family
    2 cups oatmeal -not instant or quick cook
    1/4 cup maple syrup -or can use honey
    1/4 cup olive oil
    2 tbs brown sugar
    1 tsp vanilla
    1/2 tsp salt -or to desired taste -this was perfect for me
    1/4 cup pepitas -green pumpkin seeds
    1/4 cup chopped pecans or other nuts
    1/4 cup dried cranberries
    2 tbs sesame seeds
    Dissolve brown sugar in maple syrup by microwaving and stir until melted. Add vanilla and salt to liquid. Add chopped nuts to oats along with additional add ins, then stir in liquid mixture. Spread out granola on parchment lined baking sheet. Kind of crowd them in the pan. Bake at 350 for 25 minutes. Check your granola after 12 minutes and stir the granola in the pan to make sure that the granola is evenly toasted. Let cool completely before breaking up. The granola will get crispier after cooling. Store in air tight container.
    ⭐️HAWAIIAN FRIED RICE -
    GREAT VALUE LUNCHEON MEAT or SPAM - I used a few slices - use more or less to your liking
    1/4 cup PINEAPPLE chunks - cut into small bite sizes
    Veggies - Either 1 cup total of frozen peas and carrots, canned, or fresh. I used carrots and broccoli
    long grain rice - 4-6 cups cooked
    turmeric - 1/8 tsp -for 4-6 cups rice
    chicken bouillon seasoning (or veggie) to season
    2 eggs - scrambled - I did one egg per serving
    *optional green onions (approx 1/8 cup), cilantro, and sesame oil
    garlic powder 1/2 tsp
    pepper - to taste
    Rinse your rice until water runs clear. Add turmeric and bouillon to the water that you use to cook your rice. I went light on both. Add about 1/8 tsp turmeric or slightly more -enough to color water (be careful, adding too much will make it taste bitter) then add desired amount of bouillon. Refrigerate rice overnight.
    Next day. Fry spam in small chunks until crispy but not completely dried out. Scramble eggs, set aside. Add rice to pan and fry with oil. Add in sesame oil, garlic powder, pepper, soy sauce, when perfectly seasoned add in remaining ingredients.
    *Optional garnish - sliced green onions, cilantro, sesame seeds, chili garlic paste or Sambal Oelek (Sambal Oelek has no garlic).

    SPAM (Special Processed American Meat) The history of SPAM is interesting. I won a trivia contest years ago by researching SPAM. 😂 It has been under rated for years but during the war it was sometimes the only meat the soldiers had.

      My dad refused to eat SPAM after he got out of the military. So my mom fed us SPAM, but had to fix real meat for him.

      @@bevintx5440 My dad wouldn't eat Spam either. We never had it at home, I discovered it after I got married and had a very tight budget. I actually like Spam and keep a couple of cans in the pantry.

      When I was a kid, battered Spam with chips and beans was the height of my culinary aspirations - it felt like we’d won the pools when me mam cooked it for tea on a Saturday night after payday!

    I recently saw another youtuber (Dollar Tree Dinners) in her budget video make granola via stove top and margarine with a couple packets of instant flavored oatmeal. I've never seen it done before and she said it was her first time trying it and it really worked out well. Probably not the healthiest or best variety, but seems worthy in a budget, no-spend, or a pantry pinch. To stay within her budget, she added nothing to it (she used it as a breakfast with her yogurt), but I'm sure add-ons would work in this situation as well.

    Hahaha! Thanks for the glamour shot of my bread. :) I'm so glad you enjoyed it. And I am definitely going to try adding sesame seeds to my homemade granola next time. Mmmm!

      Hi Steph 😁 well...I have to give credit where it's due! There's something magical that happens when you fry spam...kind of like bacon. You could also leave it out of the rice and you will have made Thai fried rice.😁 Hope you have a great week too!

    What makes Hawaiian fried rice Hawaiian . Has to be ham and if it’s cooking time from the pantry it would be SPAM. Love the granola idea. The fancy one is hands down!!! Maybe coconut in larger flakes rather than shredded? What a nice gift of bread. Thank you my friend for the great ideas ❤

    Spam fried rice is a regular meal when we go camping in The Outback. We have a small butane cannister hot plate, which is just big enough for the 2 of us. We use canned pineapple and canned diced mixed vegetables as you don't have to worry about them going bad.

    We also make our own granola- we use dates and ripe bananas instead of sugar. I realized we were out of cinnamon when I made it the other day so after grating a stick for what seemed like an eternity 😅 I just used pumpkin pie seasoning and it was great!

      I’m curious as to whether you just cut the dates and bananas into small pieces and add them? Or do you process them in a food processor or blender so that they will coat the oats?

    You can toast the coconut separately and then added to the granola mixture..Love homemade granola and also love your recipe for the fried rice. Thanks for all the ideas.

      I add my dried fruit to the granola after it is cooled so it doesn't get dried out. I also add chocolate chips. 😂

    Oh, I really like this one. Especially the way you did the two versions of the granola so like if it’s in between paychecks, I make the basic one and after payday I get the supreme one.! 😂

    I'm going to try the deluxe granola and the Hiwayan Fried Rice. Don't know why I haven't made granola, it's so expensive now and comes with fewer ingredients in the store. At most stores, you have to buy 2 to get a decent price. Thanks, Michelle for all your wonderful recipes!😻😻😻😻

      I just made some shrimp fried rice a few days ago - my kids and I love it, and it's a quick dish! I can easily make a veggie fried rice and not miss the meat - maybe add some chickpeas and green peas and we're good for protein! 👍🏾👍🏾

      Absolutely! I share your videos all the time to show my family, friends and co-workers an inexpensive way to put beautiful meals together and decor for the holidays! I just absolutely love it. My grandma always told me that people eat with their eyes! She’s correct. I watch several videos from other budget friendly channels and their food is not always eye appealing! Nor is their kitchen appliances clean! So I appreciate your cleanliness and beautiful food and spirit!

    Love these! I need to try the sesame seed next time I make granola. I find pepitas, as well as other nuts should be toasted every so slightly before putting into a granola unless you are doing in on the stove top. Recently saw a video from Dollar Tree Dinners making granola with 2 pkgs of instant oatmeal, another great pantry idea.

      Interesting. 🤔 Since they toast in the oven, it seems like they might overcook this way. I'll have to experiment.

      @@ArdentMichellenuts and seeds always seem to need a bit more toasting, imho, than the oats. Honestly any granola is good and love it on top of French toast as well as yogurt.

    Good ideas. I always appreciate a good pantry dish. We do hot water corn bread- I use masa (like for tamales) instead of corn meal. Dried beans are a pantry staple for us , so any kind of bean chili or bean soup too. I've also been enjoying congee/rice porridge with dried ginger and egg stirred in at the end like an egg drop soup. Definitely helps to stretch food and avoid some grocery trips in the coldest parts of winter 😊

    Your granola looks amazing. With the last batch of granola I made around Christmas, I added dried mango and blueberry to part, dried apple and fig and then did the rest of it with dark chocolate and peanut butter chips. It's soo good. The dried blueberries are from our own bushes. I put the granola in the freezer and it lasts a long time.

    I love these pantry meals! I have staples in my cabinets and welcome your ideas on how to prepare them. I like the little details you share, like recommending that the vegetables in the fried rice not be cooked too long since it changes not only texture but flavor.

    Another way to make granola is to toast oatmeal packets on the stove. I like to use maple and brown sugar. Turns out nice and crispy!

    If you dont have brown sugar
    Make some
    2T. Molasses to 1c. Sugar adjust molasses to go light or dark brown sugar
    For clusters
    Adding whipped egg white, press into pan and bake as usual, then break up

    Looks great michelle! I was going to add one thing ,
    I fry my pineapple a little little bit and get a little caramelization on it and it’s super good that way.. I have also made fried rice with chopped up kimchi and little cubes of spam and that was delicious too. I learned that from a Korean family member.

    😋 yumm!! These looks great, will try! ❤ . Like those jars for the granola! Saw a rice dinner recipe that used leftover 🍚 rice, onions, soy sauce and a over easy egg on top! Think from Ten dollar meals on FN. May have had peas too. That bread looks yum too! 🤗 🌺 💕

    I literally have a gallon of maple syrup in my fridge that I bought from a co-op really cheaply - Canadian here. I know I am lucky. I literally add it to everything in place of sugar...
    I love these pantry meals though - I will be adding them to next week's menu plan.

      I've had a big thing of maple syrup too that I haven't been using. In my trek to eat healthier this year, I've decided to try to use it everywhere that sugar would be used. So much healthier. Glad you like this video. Thanks for letting me know!

      ! @ArdentMichelle Honestly, with my Dietician hat on, I have to point out that maple syrup is no "healthier" than any other sugar - it just tastes better.
      Sugar is sugar and our bodies handle them in exactly the same ways.... It all gets broken down to glucose, which then causes an insulin spike. An excess of any sugar, including any "natural ones" like maple syrup and honey can still cause diabetes.
      But maple syrup is amazing and the main reason to use it is for flavour!

    Yum! When my kids were little once I made chocolate granola and it was very successful with vanilla, yogurt and bananas… I added a couple spoonfuls of cocoa powder to the brown sugar, butter, and then some mini chocolate chips that were left from a recipe and it was so good! Try it!

    Love the rice recipe and they actually sell a vegan version of spam (Unmeat) and with Just Eggs this could be made vegan. Thanks going to make the granola today!

    Hi Michelle! Another timely and tasty video. I made granola a while back and loved it. It still spiked my sugars a bit but I used it with plain greek yogurt and it is a yummy satisfying treat. You have inspired me to try again. Thanks again for being an inspiration. Wish we were all in Hawaii eating some fresh pineapples. But, your fried rice looks tempting in stead.

      you could try the Hawaiian fried rice with cauliflower rice 🤔 or even half and half using brown rice might not be bad. Someone just talked about making a low carb granola...sounds interesting.

    I should make a batch of granola while I roast the chickpeas for snacking. I used to buy these thin sesame crisps as a kid which was basically just sesame seeds held together with honey or sugar or something so that would go great with granola, just gotta decide what nuts and fruit I want in it.     Homemade granola was a popular snack when my boys were young. Excited to try sesame. Would also make croutons that my sons would snack on . Love spam in fried rice. Another interesting additive for a cookie is a little black pepper. My friend told me it is an Italian Christmas cookie. Now im going to search for that recipe 😋

      I make a masala tea at home, and after I add all the other spice ingredients, I also add pepper because it’s just perfect. I should try it more in sweet recipes.

    I can't eat oats but I make granola for my husband. He prefers to have dried fruit added after the granola is baked and cooled.

    I just put some granola in the oven to try it out. I added oats, tons of shredded coconut, sliced almonds, pumpkin pie spice, a tiny bit of pecans I had, sesame seeds and chia seeds. Trying it without the oil. It already tasted great before cooking so I think it’s going to be yummy!

    All of these items are in my pantry. I am the only one that likes granola. That's ok. Leaves more for me. lol. I always have canned pineapple and peaches. So many recipes. I did spend $67 this week @ Aldi. We will be home due to sickness and weather for the next 10 days. (North Mississippi) I was already well stocked. Topped off our favorites.

    i actually never buy brown sugar. I keep a big jar of molasses and make my own whenever I need it. it's super simple. Light brown sugar: Use 1 tablespoon molasses for every 1 cup sugar. Dark brown sugar: Use 2 tablespoons molasses for every 1 cup sugar. Just mix them in your kitchenaid or with a hand mixer. You can stir them but i don't recommend it lol. it takes ages and it's not as uniform. I will probably make some granola this week!

      I need to buy some molasses. I've never purchased it before, although I really want some now to add into my next batch of granola. I have a vague memory of how good it is. Thanks for the tip on making your own brown sugar.

    you can also use oatmeal packets browned in a little bit of butter/oil to keep the cost down. all seasons included in the packets, ie cinnamelin, sugar, etc.

    Yesssss! Our big family makes fried rice every week! We don’t eat eggs, oil, meat or dairy so we do it a bit differently. We use silken tofu with tumeric, garlic powder, onion powder and (small amount)black salt for egg replacement, rice, coconut aminos, & veggies. So yummy! We are having a fun time with a low spend January… have only spent $43 so far on groceries and nothing else except bills. All meals from home. I hate January because of how cold it is here but no/low spend makes it more creative & fun!

    I'm going to guess, for the Hawaiian rice, that it's Spam and/or pineapple. I've made a low carb high fiber "granola using flax (ground) chia seeds, wheat bran, nuts and seeds and stevia

    I can’t wait to try the fried rice! It looks so good, and easy. I make granola with a little oil, brown sugar, and molasses. Also add chopped almonds, and ground flax seeds. The molasses is really good, and way cheaper than maple syrup.I think you would like it!

    I bet you could add seasonings to granola too, like making a gingerbread flavor, or adding nut butters. I bet trader joes specelos butter would be soooo good.

    Have you ever tried using bacon dripping/ fat to make the fried rice in? It gives it so much flavor you really do not have the need for the sesame oil unless you just want it…plus a little goes a long way.

      I could see how it could be gross if not cooked correctly (in my opinion fried, lol) and I totally get the associations that are created after someone gets sick with a particular food. I don't eat meat much, but even I must admit that spam is superbly tasty 😂😂 Glad you like my meals 😁

      I guess if we make the rice and leave off the spam we would call it Thai pineapple fried rice - which is what I normally make for myself. 😂

    The granolas look good. I like it simple the best. I wonder if it would be good to make the granola and then stir in cocoanut flakes when you are breaking it up after baking? I don't think it would disappear.

    Hi Michelle, How did you know that I was going to make granola today??? When I was at Walmart the other day I was going to buy it but as you know it's very expensive. I did actually pick up that same small bag of great value it was close to $3, ridiculous as it tastes nasty. Anyway on the way home I thought it's been literally years since I made it and I have all the ingredients at home so I kicked myself for buying that. Anyway I did love your deluxe version so I am making that, I have several dried fruits so I know it will be a winner. Your fried rice looks good too, I love anything rice. Have a great week.     Though Spam is convenient, easy to use and has a long shelf-life, it's also very high in fat, calories and sodium and low in important nutrients, such as protein, vitamins and minerals. Additionally, it's highly processed and contains preservatives like sodium nitrite that may cause several adverse health effects.

    Don't waste money purchasing zest at the store. Zest all types of citrus fruits, let it dry naturally in a saucer on the kitchen counter and store it in reused spice jars. Or make extract using only peels or vanilla beans in vodka.
    Use the drained canned pineapple juice in the dish or save it for another dish or add it to juice or tea. It freezes well.

    Looks good. Can’t eat any of it because of the carbs.
    I wish it were easier for us diabetics to eat cheaper but I need high quality protein and that’s not cheap Unless I want to eat chicken legs and veggies all the time

      You could substitute the rice in the Hawaiian fried rice with cauliflower rice to make a low carb version. 🤔 You could also sub in miracle noodles and it wouldn't be like fried rice, but it would be a delicious meal. I love those miracle noodles.
      For the granola, oats are suggested for diabetics- is there anything you could sub for the maple syrup to maybe make this suitable for you? It seems like one of my viewers was going to try to make this lower carb. You might want to read through the comments.

      You get points for spending at Samsclub that equate to dollars. Samsclub is owned by Walmart, a big box retailer (in case you are from another country). I've saved mine throughout the year in order to use them in this no spend /low spend January challenge.
