Hey guys, my mom is watching you and I caught the avocado part. You may actually like guac prepared a specific way. Fresh can be kinda tasteless or watery and lacks the bloom it gets from a night in the fridge when it's been mixed with seasoning. Please try to make it again sometime, use Hass avocados, they're less watery. When you choose them at the grocery, touch them and choose ones that are a nice deep dark color. They should still be a bit firm, but you really want them to have enough ripeness to indent if you press just a bit on the skin. Sometimes they can be a bit stringy, you can always remove the stringy bits while you're preparing. They're not supposed to be milky or watery in guac. Ripeness has a lot to do with it. The really large Cali avocados are not the best choice for guac. You're looking for a buttery consistency of the fruit. It'll smear if you press or squeeze and stick to your fingers, -almost- like a banana if it's properly ripe. I chop it, not mash it. Seasonings- lime, black pepper, garlic, salt, cumin. Easy on the cumin, it's strong, you just want a hint. The lime helps stop it from oxidizing as quickly. Give it a good mix, don't worry if the chopped pieces look like they're smearing or melting. Supposed to. The lime can be strong, you don't need a lot, say a tsp per four avocados. Use fresh minced garlic (it's okay to use pre-minced in a jar but fresh is best flavor) about 1/8 to 1/4tsp. Pepper to taste, salt tp taste. Mix it well, put either a piece of wax paper directly on top, press it down to keep air from getting in and turning the avocado brown (that's purely for aesthetic, the brown is perfectly edible and still yummy) or plastic wrap pressed directly on top. Fridge for 2 to 24 hours. The longer it sets, the better the flavors will seep into the fruit. Stir before you eat, chips, bread, sandwich, salad, even by itself. If you really want to kick it up a notch, add finely diced tomatoes during prep. 1 tomato to 4 avocados. Love you guys! Really glad you're out there living it up!
