@@renaissancemarinetv3536 A butcher we use here in AZ fixes up our javelina very much like you did your hog meat - added pork fat and spices. We don't know exactly how but sausage is pretty damn good! Javelina tastes nothing like wild hog since they're actually part of the 'rodent' family. The 'older guys' used to gut, skin and spice then throw them in a wet burlap sack, layer palm tree branches on them and 'pit BBQ' them right in the desert ground. I've never had that way but heard it was really good. Anyway looks like the 'Carnivore' grinder is a great investment!
