Growing up back in the days this was a regular dish, along with raccoon, rabbit and deer. You rarely hear of these old school dishes anymore. You took me back to my childhood years. Man, Growing up in Brooklyn NYC back in the 50's 60's This meal became a Song played everywhere. Joe Cuba Sextet, Bang Bang a song about this very meal , Corn Bread Hog Maws and Chitterlings, Loved that song as a kid, and I'll Never Go Back To Georgia. I have not thought of this until I watched your video. Wow you triggered memories again from when I was so little. This and the ribs was off the charts. Again Thank you so much for keeping the light on. ✌
Lol I know that song. When I was a kid all I did was hang out with all the Olders. My mom would say I was 10 years old going on 50 lol. Great part is I have not changed. My oldest friend is 98.

And my family is like yours, if someone took the time and love to make them, you better be in line quick at the family gathering because it's never enough.
I'm mexican and we have a soup we make from beef tripe,(rinsed with vinger and cut into squares as well!) Red chile and hominy called menudo. One of my favorite dishes is beef intestines cleaned out very well then seasoned and fried until crunchy.we make tacos with them. Add chili salsa, onions and cilantro Its so delicious. 👍

The first hog maws I had, my sister in law cooked them. No celery or bay leaves used. Everything else was used, and of course, hot sauce. Hog maws combine with chittlings over rice, comfort food. Yummy! Thanks for your version.

My paternal grandmother was from the south, and she would cook hog maws and chitterlings only for New Year's dinner. I'm in Dayton OH, back in the '50-'60s, we had several African-American stores where you could buy whole hog heads, hog maws, chitterlings, meaty neck bones and lard..but they're all closed now. I have cooked 4lbs of chitterlings in my Instant Pot pressure cooker, basically, seasoning the way you did, but I used chicken broth. They were done in 60mins..
Yes I have lots of second-generation Italian friends from NY that eat trippa. Beef and pork. One friend cooks the pork down in red sauce till tender. Its so good over fresh gnocchi roasted in garlic sage and butter.
My grandfather used to make hog maws when I was a kid. And yes they were delicious! Watching this video made me realize I’ve never made them for my kids. I need to. Because you’re right. We can’t forget about the foods that sustained us for so long. You brought back some fond memories for me with this one!

In my youth, some of the guys I worked with on Saturdays in particular would pick up gallons of Menudo with many other delicacies from a local restaurant. It was delicious and this is how I was introduced to this kind of foodstuffs, outside of the sausage casings, offal, head cheeses... I would probably like this dish.

You're right about not sharing recipes . My mother was the best cook in the families. We knew more about the pots than the recipes. The pot you're cooking in she called it the Chiiting pot.Thanks for sharing..
I didn't know Hog Maws existed. I'm pretty sure they aren't available over here in UK. But I remember tripe. Offal is a tricky subject for some people. One of my favourite foods is steak and kidney pie. Liver and bacon is also pretty good. It's a great idea to cook these dishes. They are VERY tasty and people need to know about them.
Yes this is true. I grew up eating every part of the animal. We wasted nothing. But I think fast food did a real number on the world. I think people have forgot great food or just flat-out do not know how to make it. Sad. Thank you so much for the great feedback and for sharing and watching.
I thought hog maws was the head and brains boiled with cabbage. My grandfather used to make this once or twice a month. I never watched him actually cook it. I did eat it a lot. It lasts all week. I used to live chitterlings. I bought 5 buckets and a lot of white rice. I no longer crave it. LOL
@@bbqsouthernstyle the chitterlings cook down so much. You have to get at least two buckets. Some how two turn into five. Sometimes the brains were called Hash when they would cook it. You just made me think of scrapple. What do you know about that? Good eating!!!!
