How To Make The Classic La Chouffe Belgian Blonde Beer at Home

  • This is one of my rarely vlogged experiments, I don't usually bother unless it's a tried and tested recipe that I want to share but I picked up the camera on the off chance and I'm glad I did!
    This is a surprisingly simple recipe for a classic Belgian Blonde Ale, I researched a few books and ended up with this, I hope you enjoy the video and please let me know if you have any questions.

    50 g (13 IBU) - Saaz (Whole) 2.5% - Boil - 90 min

    After reading a few different La Chouffe clone recipes I settled for this one and just tasted it last night and was amazed at just how close it was to the real deal. Thank you for posting this video and very well done! I will definitely be making more. The only changes I made was adjusting the grain bill for my efficiency and I used a quarter of the coriander seed as I was worried it would overpower the taste. Great beer. Cheers man!

    Hey griffo, always really enjoy the vids keep it up! I find with the GF even a couple of handfuls of rice hulls in the mash really help the recirculating and helps it clean up nice... Also.. what are those kviek bottles you had in shot when measuring the hops! 🤔😆 Looks interesting!!

    Nice vid mate. I’m doing this tomorrow! I’m using a Grainfather recipe somebody else drafted up. Candi sugar, pale ale malt. Styrian goldings as well as Saaz, but with 15g coriander seeds. Hoping it’s anywhere near close!!!

    Followed your recipe,I reduced the coriander swap the caster sugar with clear Belgian candy sugar,swap yeast with Abbaye Belgian Lallemand.
    I compare with the original and I'm absolutely impressed.

    Hi Griffo thanks for posting this I love your vids and La Chouffe so will be having a go at this one. Quick question if you don’t mind. I see you didn’t use a hop spider or a bag but your wort was clear in transfer and didn’t appear to get stuck. Is there anything else you are doing to help get the results you have?

      Hi Joe, thanks for your comment. I use Irish moss as finings and I believe that the leaf hops act as an additional filter (as long as there aren't too many of them! ) 😂Cheers

    Did you only use 1packet of yeast for a beer of that strength. I would of thought 2 packs or a good size starter

    If you want to get closer, you need to use the Ardennes yeast (WLP545/Wyeast 3522/ Omega OYL-024)

    Hi, I really enjoyed watching your video!
    I saw how you let the wort ripple from some height into the fermenter at approx. room temp. Do not fear oxidation? Or, are you doing this on purpose?

      Thanks buddy, Yes I do this on purpose, you want to introduce oxygen prior to fermentation, the yeast need it. It's after fermentation you need to avoid contact with oxygen to avoid oxidisation

    Hi Griffo- looks like an amazing beer and great recipe! Looking forward to giving it a try. I see you used a bag of sugar. I bottle my brew and use sugar drops for carbonation as I don't have kegs. Do you think I could do this instead of adding the bag of sugar during the cook or will this really change the result? Thanks so much mate. Your brew house looks like a great setup.

      Looks like I misunderstood the recipe - I see now the sugar is a replacement for usual candy sugar which is seperate from carbonation sugar - cheers

    La Choooofff :D Good vid. I'll give this one a bash myself. How long after primary did you keg it? Is this a beer you can drink soon after kegging and force-carb or does it need time to condition?

      I left it for 2 weeks in primary, kegged for a week then started "Sampling" 🍻😜

    Hi great video, looking forward to making this. Love La Chouffe. Just one question and excuse me if daft, in your recipe, you refer to 1kg of "Other" grains? What else did you add?

    Man... I wish you took the time to add imperial measurements for your friends out in the states.... either way thanks for posting, I'm going to give this one a go (after I convert all the measurements to what we use here lol), la chouffe is one of my favorites and it's gotten significantly harder to find since the pandemic.... cheers!

    Do you buy your grain bags Pre milled? If so that can cause efficiency issues and possibly some of the problems you have here. I’ve read that a lot of the husk can settle in bottom of the bag. Just a thought. Like the vids. Keep it going Cheers!

      Ah good point! The recipe below isn't adjusted for the IBU difference. I would add a touch of bittering hop at the start just to increase the IBU by a bit. Cheers

    Currently on day 10 of fermentation with this recipe, excited to bottle and try it soon. Just wondering how long you recommend bottle conditioning and allowing the beer to mature? I’ve read that high percentage Belgians benefit from longer bottle conditioning times. Cheers

      I still have some bottles of this leftover (accidentally) and it’s still great but Ive found not much benefit after 12 months with this recipe - maybe leave for 3 months? if you can! 😂🍺

      @@HomebrewGriffo Well, I tried my first bottle today after 2 weeks bottle conditioning, have to say it turned out great! Very like la chouffe but spicier and with a stronger afterburn. My head retention is quite poor but I think that’s due to the amount of priming sugar I used. Nice mouthfeel. Overall a great first attempt. 7.5/10 anyway :)

    Where to source 'Avangard Pilsner Malt' ?

      There are many other brands available in most online hb stores, any good quality pilsner malt should be fine

      Pellets nowadays, more versatile for storage and dry hopping 👍 Although I am growing my own hops too 🍺

      May be it was 5gr?
      I brewed once a saison with 20gr of seeds and the coriander was extremely overpowering even after adding 5gr/l dry hop with Sabro

    I think the difference in color can be explained with you using regular sugar instead of candy sugar.. It doesnt really matter though.

    tried it but the koreander didn't gave flavour for my beer...... or it was old or i need to crush it :( but a hell of a triple it was :)

      Always best to lightly crush the corriander seeds to release the flavour, yes, the base triple is a nice beer! 👍
