Sweet, long Italian peppers are a delicious gift the summer offers each year. There are so many ways to prepare them, and making these peppers is always a great accompaniment to any meal. Picked when perfectly red or even when still green, they are ready to serve in no time at all when roasted in a hot oven. Today we chose to roast them with plump cherry tomatoes, garlic, and small anchovy fillets tucked inside each one. If anchovies are not desired they can be easily omitted. Let's get started!

Oh boy does that ever look so good, especially cooked in a wood fired oven. I'd love to smear some of that roasted garlic on crusty sourdough bread, layer tomatoes and peppers, and top with some nice smoked provolone cheese and finally drizzle some of the pan juices overall. That would be heaven! I'm germinating Jimmy Nardello sweet Italian peppers for this year’s garden which would be so suited to this recipe. I even grow my own garlic, tomatoes, and herbs. I will enjoy this so much, thanks for adding something so fantastic to my cooking.

What do you do with the oils left in bottom of the pan?
The skin is never removed ?
Looks wonderful but she didn’t say anything about the finished roasted garlic. You can’t eat the skin so either you pop it out of the skin or it’s for flavoring and you don’t actually eat it.🤔
