Our favorite pub had to cancel their St Paddy's day celebrations due to COVID and I was so craving some of their colcannon to go with my corned beef and cabbage. Thanks for the video. I think simmering the scallions in the milk is a brilliant idea. Only thing missing for dinner now is a nice pint of Kilkenny Cream Ale.
Omg I made this tonight my first attempt at colcanon! I wasn't gonna do the fried egg on the sausages but changed my mind last minute I'm glad I did! Absolute comfort food what a treat! Thanks for the vid👍
We always ate kale raw in salads...with spinach this would be a breakfast I would cook with all the same ingredients....just prepared a little differently! Kale is good food.
I'm going to start making these recipes for my lunch on some weekends. I can't wait. My husband hates new foods which is why I didn't say I'd make them for dinner. I have a good friend that lives in Ireland. I wish I could visit your country.
@ceahorse56 thanks for your comments, kale from the garden, wow, can't get any fresher? I hope you enjoy it as much as we did, you can't beat good wholesome food and your own larder on your doorstep!
@syd204 Thank you for your kind words, we filmed the'Rea'l Irish Stew video and will put it up next Thursday, it was so tasty, even if I say so myself!!! Next up an Irish Chowder. Tony O
christ almighty, this looked tasty!! my own recipe( maybe it was copied from somewhere) was a combination of mashed spuds, bacon or chunky peices of ham, cabbage and leeks. with a dollop of butter, salt and pepper.
Gave this a go, splendid! Is there an actual written out recipe of this? It turned out just fine, just wanted to see what difference it would make if I were more precise.
Could we cook the kale and green onions with the milk at the same time? I love how u do this!!! My father(I was raised in Arkansas America) use to always use green onions and sour cream in his tatos ❤️
Kale can make the milk slightly bitter. Don't advise doing it that way. Soften it in a little salted water, like collard or mustard greens. This will break down the bitterness. Drain the water after cooking and fold it into the potato mixture. Daria Allen wrote several classic cookbooks on traditional Irish cooking. Recommend checking out her instructions on colcannon and the related dish champ. Her cookbooks and the cooking school she founded caused the Irish food revolution of the last 40 years. Her daughter Rachel Allen has several popular cooking shows on food networks and the internet. You can also make this recipe with collard and/or mustard greens. Just adjust cooking times to make sure they're softened. If you already know how to make greens, no big deal.
@ceahorse56 I am use to having a nice bit of braised belly pork with my colcannon, the sausage and egg is Lorcan's version. Have you paid a visit to the site, we have new videos every week. Tony O
My Parents were from Kerry, now when my Mom made this she usually mixed the Onions,Spuds&plenty of Butter together and then baked it for a few hrs(obviously not on to high a heat)and without sounding biased,I'm pretty confident it tasted better than this. She also used to stuff the Turkey at Christmas with the same, which also tasted great..This was more of a fancy "bubble&Sqeak"recipe ,but nicely presented to be fair..
i dont know where the sausage and egg idea came from my mother boiled a big pot of floury spuds on an open fire then mashed them with a wooden pounder adding chopped raw scallions pepper and salt piled it on 8 plates with a big plate homemade butter in middle of table and we would dig hole in middle and fill with the butter all 8 of us soon made short work of it
That's champ, not colcannon. Grew up eating it in LA, still eat it, taught my family how to make it. Three generations born in California, another generation born after me and we still eat a lot of Irish (food).
You need more potatoes in it. I know you're both Irish by your names and your subject matter but your accents sound more English. No insult intended. Where in Ireland are you from? I'm an American with only one non-Irish great-grandfather (a German Catholic). All my people are from Cork and Kerry so that is the accent I'm most familiar with (and a little Irish Gaelic too), and most of them left before 1930 as teens, so my knowledge of current accents is from relatives visiting, TV, radio, You Tube and a few recent Munster immigrants I know. Obviously, I am no expert on Irish regional accents so forgive me. Of course none of the leaders of your current government sound Irish to me, so Dublin accents are hard to identify. Anyway, thanks for the video. When I make colcannon I make it like champ, then shred and boil the shredded green curly kale in SALTED water (same as you) then fold it INTO the salt, mashed potato & cream/milk/butter mixture with the green/spring onions at the end. Subtle differences, but this is a technique recipe that also requires the good quality ingredients to be at its best.
@@latreenahaney9204 Some vitamins are 'fat soluable' , meaning no fat no vitamins absorbed , so fat is essential . My version would be more fattening as I use so so much butter on my bread (I don't mean margarine).

Cabbage is the cole family of plants and all the "kol" and "col" foods like kale can be used to make colcannon.

Do the Irish fry leftovers up for breakfast like Bubble and Squeak?
christ almighty, this looked tasty!! my own recipe( maybe it was copied from somewhere) was a combination of mashed spuds, bacon or chunky peices of ham, cabbage and leeks. with a dollop of butter, salt and pepper.
Whenever I saw him cooking green onions in milk I thought yuk!!! But it has everything I like and cook... Just a little different!!

I'm going to try this!!!!
Proper food. No rice, pasta, jarred sauces or any of that crap.
What's wrong with Rice or Pasta or Bread for that matter?
But still loaded with fat and carbs.
Well, rice and pasta are carbohydrates, exactly like potatoes
Could we cook the kale and green onions with the milk at the same time? I love how u do this!!! My father(I was raised in Arkansas America) use to always use green onions and sour cream in his tatos ❤️
And his mom, raised in Missouri America, made lumpy tatos, the red kind was her favorite

Yes some Comfort food
Full fat milk, 'the creamiest you can get'.
Gold-top milk: Am I a joke to you?
Never even heard of gold top milk in my country.
@@OffGridInvestor They might call it Jersey Cow Milk or something similar.
❤️
Just what you need after a few pints of the Black Liquid Gold.
You said cabbage ... how much cabbage? I think my grandma made this when I was little. Cabbage, not kale. Thanks Mr. Tony
yummy
After that - the washing up
I missed the whole how to serve bit..
🍛☕🌿
Never heard of this dish. Looks good, save for the fried egg.
Now was there less sausages at the end of the vid ? Great stuff , good honest food .

This IS NOT Irish bubble'nsqeek 😁
When you are "abrod" there is nothing - I'm sure you mean abroad.
enjopy- enjoy.
Well at least you can cook!
I cheat badly
It was great till he put the egg on there 🤢...

Looks really unhealthy. Saturated fat everywhere.
@Simon Scott I hope lard was used to cook the sausages just to annoy the health fanatics.
Nothing wrong with fat

Just have a Diet Coke with it...it cancels out the calories
