    Costco employee here, I've seen worms sometimes in those salmon and have to bring it to the back for disposal. I'll say a good 97% of the time they are good to eat mainly they get rotated out often. Its actually a pretty common thing and i still highly advise against eating it eat raw.
    Do what you will with that info.

      From farmed salmon as well? Farmed salmon raised on parasite free food in open waters is actually supposed to be ok to eat raw so long as it’s fresh, even without freezing, per the fda.

      ⁠​⁠@@aptapathy I did a research project on farmed salmon and the (mainly farmed) fishing industry and I can assure you that farmed salmon is definitely not parasite free. It’s a major concern for spreading disease between farmed and wild fish. It’s honestly a very interesting topic and if you have the time I would recommend looking into it yourself. I could go on and on about it but it’s really a topic best suited for your own perspective.

      ⁠@@patriciaarlen3382there is an issue for sure, but the parasites they have are sea lice, which are not harmful to humans. I’m mainly referring to farmed Atlantic salmon in Norway, which is where Costco sources from.

    USDA requires fish that is meant to be served raw to be frozen at -4 F for a week or -30 F for 15 hours to kill off any parasites as they can be a serious detriment to your health. Also, farm raised salmon has larger fat lines than wild caught.

    Most fish including salmon have been frozen btw. Right after they catch it and process it, they generally flash freeze fish. This should also kill off parasites pretty quickly

    Wild caught salmon needs to be frozen for couple days in order to kill off any possible parasite/bacteria. Same for farmed salmon but farmed salmon is a lot less likely to have parasites (it still can have it). Most health departments will require you to freeze salmon before serving raw to be safe anyways. For cooking, no need to freeze.

    im not a sushi chef by any mile here by from what I remember you don't make sushi with raw fish, correct me if I'm wrong but you're supposed to freeze them for a certain amount of time to kill the worms (if there are any) right?

    Iirc the lines could just be because they're different cuts or because farm raised salmon tends to have a higher fat content so the lines are thicker than wild salmon

    You realize that both fish were frozen at some point right? The fish you get from the big stores like Costco are shipped from across the country if not the world. There is no way for them transport them for that long without freezing them. They just put them out to thaw once they reach the butcher. Only way your getting truly never frozen fish is if your on the coasts or special fish monger markets. In fact the frozen fish at the store is often better and more fresh because it wasn't thawed out to lay around for a long time. Get your fish frozen, and make sure it's wild and comes from a good region.

    Is it really safe to eat the fresh salmon without freezing and curing, etc? A lot of people could have touched the fish with their hands. I always freeze and cure just to be safe because I want to eat a lot of it and I really don't want to risk getting sick. Is that a good way to do it?

      Freezing fish kills parasites but most salmon used for sushi is farmed raised and parasite free. It is necessary to cure or brine the fish though so that any bacteria on the fish dies

      I wonder how bears and animals manage to eat raw fish and meat all the time without getting overrun with parasites and bacteria induced illnesses or food poisoning. Ik crocodiles have antibacterial blood, hm that would be really cool to have but idk about the effect it would have on our gut flora

    I once watched news online, someone felt so itchy from under the skin inside his body, then went to the doctors, went through a thorough examinations, and turned out that his body got infested by parasites and almost went to his brain too. And this happened bc he ate raw sushi and handling it not the right way.
    Look it up, I’m sure you can still find that news somewhere online.

      I think it means marinate in soy sauce but you have to dilute the soy sauce with water otherwise it would be too salty.

      1/4 cup mirin or cooking wine
      3/4 cup water
      1 tbsp sugar
      1/4 onion roughly chopped
      1 scallion chopped into 2-inch pieces
      2 garlic cloves smashed
      1/2 inch piece ginger
      6 black peppercorns
      1 dried chili pepper optional
      1/2 cup unpacked bonito flakes also called katsuobushi

    it made me confused when someone said "fresh" packaged salmon. by the regulation in US, they are all definitely frozen before packaged and sold. the difference can be the freezing time,

      To safely consume ANY fish raw it needs to be “sushi grade” doesn’t matter if it’s farm or ocean all fish consumed raw must be flash frozen to make sure all parasites are killed

      I know the frozen one is safe. The fresh one I'm not sure about because there is not good regulation on salmon farms enforcing that they are following the guidelines the FDA gives for raw salmon consumption.

    if the salmon is sushi grade, they are both frozen, Sushi-grade fish is caught quickly, bled upon capture, gutted soon after, and iced thoroughly. Known parasitic fish, such as salmon, should be frozen at 0°F for 7 days or flash-frozen at -35°F for 15 hours. This will kill any parasites, making the fish safe for consumption. So this video make no sense

      Salmonella can only occur on the shell, so really you could just wipe it with bleach and still safely eat a raw yolk
