Yacon or Ground Apple Growing and Harvesting - Yacon Syrup Processing at The Factory

Yacon or ground apple is a plant that gives and gives. Above the ground, Yacon produces sunflower-like flowers. The root below has two distinct elements. On top is a bunching of reddish rhizomes which look similar to young ginger. Underneath are brown, edible tubers that look like sweet potatoes or sunchokes. Yacon or ground apple have a crisp, fresh bite, similar to water chestnuts or jicama, and taste like a cross between apple, watermelon, celery and pear.
Yacon, calling the vegetable a “superfood.” The root vegetable is a high fiber, low-calorie food with beneficial prebiotic and probiotic bacterias which are thought to aid in digestion and gut health.

Ich baue seit 5 Jahren Yacon in Deutschland an bei uns wird geerntet wenn die ersten fröste über das Blattgrün drüber war, dort werden sie im vollen grün geerntet. Wie merkt man bei euch das die Yacon reif sind?

Das Laub der Pflanze beginnt gelb zu werden und abzusterben.
Die Knollen lassen sich durch leichtes Ziehen leicht von der Hauptpflanze lösen.
Die Knollen fühlen sich fest an und haben eine gute Größe erreicht.
Die Schale der Knollen kann auch leicht gelblich werden.
