Ned, the reason for the slow, poor touches by the players is that they are not match sharp. Sharpness is shown by the diamond shaped symbol. The way to fix it is to go on to training after every game but the same day, and tweak the training scale of each player to what they need. There are some shortcuts in that menu to shorten the process. Will make the world of difference.

@@ToffeeTVEFC - Yeah, I initally thought "Training Plan" was some cosmetic nonsense, but if you go into it right after every match and change each players training - based on whether they need more Performance/Sharpness or Energy/Fitness focus training that week - then your main CB pairing (for example) should only need a rest match at busy times like Christmas.
