    RUTH’S CHRIS INSPIRED STUFFED CHICKEN BREAST
    Prep: 15 min
    Cook Time: 30 min
    Total Time: 45
    Level: Medium
    Serves: 1-2
    INGREDIENTS
    • 1 2-3lb Chicken
    • 1 tablespoon salt
    • 1 tablespoon pepper
    • 1 teaspoon paprika
    • 1 tablespoons of melted lemon butter
    • 2 table spoons of canola oil
    • 1tablespoon of fresh Thyme chopped
    Chicken Stuffing:
    • 1 (8 oz.) cream cheese
    • 1 oz dry hidden valley ranch dressing mix
    • 1 teaspoon Worcestershire sauce
    • 1/2 teaspoon Tabasco sauce
    • 4 oz. (1 cup) shredded cheddar cheese
    • 1 teaspoon fresh or dried parsley, chopped (optional)
    Directions ( follow video)
    1. Season butterflied chicken breast inside out with salt, pepper, paprika and set aside.
    2. Preheat oven to 450
    3. Add cream cheese, dry hidden valley ranch dressing mix, Worcestershire sauce, tabasco sauce, shredded cheese and dried thyme removed from sprigs to a bowl and mix you can add a half of teaspoon of salt and pepper to this mix for additional flavor (optional)
    4. Add cheese mixture inside of the chicken breasts slits
    5. Add chopped parsley/ thyme on top of the chicken and add chicken breast to oiled cooking pan placing breast side up
    6. Cook chicken in oven un covered on 450 for 30 minutes until internal temperature is at least 165 degrees

    Saw one recipe from an ex-Ruths Chris employee and she used Boursin Garlic/Herb cheese...so there's a nice little variation also. Great job on showing how to prep the chicken instead of just using a skinless breast....gotta love the skin-on approach for both flavor and presentation.

    Is that the Cornish hen...... That looks so yummy Can you use other dried spices like crushed red peppers n dry Italian seasoning mix? Or maybe dice a fresh Sorrento pepper? Or would that mess it up ?

      Thank you I would absolutely try it with other spices and also stuff maybe with different cheeses and spinach or roasted red peppers. It wont be the Ruths Chris inspired recipe but you may come discover a recipe thats even better by trying different options. Do let me know how it turns out :)

    Nice job, keeping the skin on the chicken certainly adds flavor. Other vids cheat and use skinless breasts. Thinking of trying this on my outdoor smoker.
