I honestly think that the enterprise E could easily take on 3 vidian ships , voyager could already overpower 1 vidian ship and the enterprise E was far larger and more advanced and was a purpose built combat Battleship
From what I remember, at that time, Voyager got some plot devic-I mean, some Borg tech from that 29th century Borg baby that beefed up their ship. Later on, Voyager survived an extended engagement with a Borg Tactical Cube…honestly it’s absurd and was practically a super Sovereign by the end of the show. Even when its future armor failed it still survived a beating from a Borg sphere.
The thing is that the Enterprise uses the same ablative armour as the defiant being ablative it's destroyed by impacts and bleeding off energy this way but subsequent impacts in the same location will start to cause damage to the spaceframe it's not conventional armour it's sacrificial armour and when it's gone it's gone.
Geordi will be repairing the ship well into his 900s lol Starfleet will give you another ship if they agree with your orders to engage 3 on 1 (If they ordered it then even better) otherwise...its a court martialling XD

I'd just tow it back and harvest it for parts 🤣🤣🤣 The Ware repair station would probably want at least 20000 liters of warp plasma and 3 to 5 members of your surviving crew as payment 😄😁😆
