Instant Pot French Onion Soup | A Classic Soup

RECIPE:
2 ½ lbs onions
4 T butter or olive oil
2 T brown sugar
6 cloves garlic
2 sprigs of fresh Thyme
1 bay leaf
8 cups stock
2 beef bouillon cubes
2 T Dijon mustard
1 cup white wine (or beef broth)
1 T Worcestershire sauce
1 tsp salt and pepper
2 cups grated Swiss cheese
1 baguette
Turn on the Pot and Select Sauté/Brown on High. Add butter or oil, sliced onions, salt, pepper, and brown sugar to the Pot. Sauté for about 15 minutes or until onions are golden brown and caramelized. Stir occasionally.
Next, add minced garlic, thyme, bay leaf, white wine, Dijon mustard, and Worcestershire sauce. Stir for 1-2 minutes. Add the beef broth. Make sure you do not go over the MAX line of the inner pot. Seal pressure cooker lid and cook on SOUP, high pressure for 20 minutes. Followed by a 15 minutes Natural Pressure Release. After the time is done, release remaining pressure by allowing steam to vent, then remove the lid. Stir the soup.
Turn on the oven broiler. Before serving, top each serving bowl with a slice or two of French baguette and some sliced or shredded Swiss cheese. Place the bowls on a baking sheet and transfer into the oven for a couple minutes to broil. Broil until cheese is melted, bubbly and has a golden brown color.

@@vonkettlekitchen5704 I'm trying my Instantpot for the first time and of course I chose Chicken parm, and I'm getting the burn message. I took the lid off added more water and I'm letting the pot cool down. I hope it fixes it.

I have never had French Onion Soup with so much broth, but yours still looks good! I am probably going to try it in my Express Pot.
Is it thick enough to omit the bread? I got a texture thing with wet bread.
It is not thick. However, you can omit the bread and just put the cheese on top and broil. If you would like it a little thicker I would do 6 cups stock.
Says 4 tbsp of olive oil, adds 10 tbsp. 😝
