    As a primarily freehand sharpener who started with an Edge Pro, freehand sharpening has many advantages over systems. For comparable quality stones it is cheaper, freehand is much faster, it is much more flexible (can sharpen any knife or tool), and lastly I think it's more fun.
    The issues you're running into here getting that final sharpness lie in deburring, not angle control or grit progression. You can get a screaming sharp edge off of that first CBN 400 mesh with good deburring.
    Edge leading strokes, alternating 1 per side, until no burr is detectable. Then edge trailing, same protocol, until the sharpness comes up. Then lightly strop.

    Mate....the spyderco medium ceramic is an excellent stone!.....you wont regret that purchase. It is my go to for a quick tidy up on kitchen knives as it leaves a manageable toothy edge that just works.

    Great video as usual Pete. Cross hatch could be scratches from the initial back and forth strokes.
    The leather CBN case also works well as a Windex strop.

    Great video. I’m much happier with the edges I get on stones than I am on machines. Ive measured the edge on a wire tester and they usually get within 10-20 grams of each other. Stones all day for me. Horses for courses. Haven’t tried a Tormek yet.

    Nice to see you picking up freehand more, it doesn't give you an analytically perfect edge, but it's not too difficult and so long as the edge meets somewhere in the middle, it'll cut.

    I'll be honest I grew up with just the any old sharpening stones from the hardware store having a limited understanding and could never really get a hair popping edge. As I got older and more into it I sought better means and methods spyderco sharp maker was a good go to, then I upgraded to guided systems like wicked edge etc and loved the edges just disliked the setup and such. I began watching countless videos on freehanding and returned to it, and now it's my go to. It's truly a learned skill that takes alot of practice and frustration, but I can put a hair splitting edge / tree topping on a knife now it scares me how sharp my knifes are afterwards. My wife can always tell when I sharpened the kitchen knives when she has smaller pieces of sponge hand washing the knives lol. They shave paper and paper towel afterwards and I only found out accidentally just cleaning them post sharpening, pre-kitchen use.

    While I love my extra fine spyderco ceramic stone and wish they made the medium ceramic in 8x3, I have been disappointed with the cbn plate, my cbn started peeling off on the fine side .

    I’ve gotten a lot of good use out Spyderco’s CBN stuff.
    I like toothy edges and can get my knives shaving off the CBN benchstone.

    i like freehand sharpening. it's quite fast if you have good stones and at least one in a low grit, it's lethargic, and i get the sense of putting "my" edge on a knife. no power or rig required, although you'd rarely find yourself in a situation at home without power or space for some rig.

    I would be interested in seeing you and your wife trying out the Spyderco Sharp maker. It would be interesting to see its abilities and limitations with the premium steels you have in your collection. I’d certainly like to see how you would rate it among the other systems you have for efficacy and ease of use. Frankly I think it would be valuable to see you test out any of the available systems with the previous parameters for comparison. Thank you for the videos.       Would find that interesting too actually.
      I have a sharpmaker, and i even bought the BCN rods for it. But apart from the BCN being really good initially, the sharpmaker takes way way way too long for me compared to freehand sharpening.
      I don't even have any of the expensive "supersteels" i tried it with cheap kitchen knives and still it takes ages to make progress.
      I have spend up to an hour on it with a dull kitchen knife and it still wasn't as sharp as when i did it freehand in 5 minutes.
      So i would be interested in his take (and his wifes) to see if there's anything wrong with how i do it (given there's not much you can do wrong) or if maybe my BCN rods are sh*# and the ceramic ones too fine or not working properly either.
      If the angles are correct and the knife isn't dull, the sharpmaker is not bad, but a leather strop works for that too. (even better for me.)

    A dawn(dish soap)/water mix works well for me instead of windex. It also works well to clean off the spyderco ceramics if you use them dry.

    Freehand only. I'm using Shapton Pro ceramic stones, Naniwa Diamond stones, some water stones and a leather strop + diamond compound.

      Try out some balsa or basswood strops.
      Sand with 220 on the surface to raise grain, barley wet and let dry to further raise grain and charge with compound and let it melt in.
      These strops are the perfect mix between stones and strops. I especially like to deburr on them.
      Another thing that’s nice is to wet and mash your leather to make it less pliable.
      Just a few different textures to strop on. Also the wood ones help with feedback somewhat

    Very cool I use a hard and medium diamond DMT stone and finish it off with the spyderco medium and fine ceramic stones.

      That's about what I use, too. Coarse DMT and medium Spyderco ceramic stones. It gets me a hair popping edge!

    This is full on sharpening swagger! I love this because I have watched your super entertaining videos for years. I have mostly freehand sharpened my knives though (sometimes I use the WorkSharp Ken Onion blade grinder). I love seeing your enthusiastic and intelligent mind going after a freehand edge. The challenge inspires me. I recently got an 8” Sharpal diamond stone thanks to the recommendation of Outdoors55. It’s 325 and 1250 grit or so. He claimed it has less grit contamination than Spyderco but only cost $69 USD. I have used it once and found it does a good job.
    I sharpen my kitchen knives on water stones which seems to be easier than pocket knives somehow. I would love to see you sweating bullets while putting a fresh bevel on a Japanese carbon steel gyuto.
    I love what you do. Very entertaining.

    You did great Pete 🎉 Its good to know how to sharpen youre knives with non electricity manual sharpening equipment when its the storm season and the eleectricity is down, cant get help, and you have a fridge full of meat jerky to make but all the knives are dull.. Horror is real.. But in case you do know how to sharpen youre knives by handtools youre ok 🎉

    The opposite lines are probably the original factory grind. Meaning your angle was off or you didn't grind enough to get to the apex in certain places. After you moved the knife to a different spot of the edge, you got all of it.

      That made me cringe a bit! I always rinse and wipe my knives before switching to a smoother stone. Especially ones like ceramic or Arkansas stones.

    It takes some practice to get free hand sharpening perfect.There is room for improvement but pretty good results already.
    The cross hatch pattern near the tip is because sometimes you allow the knife leave the stone on some strokes and on other stokes the tip stays on the stone all the way. You did this mostly at the start of the video with the low grit stone so this pattern on the apex at the end may work as a low grit "contamination" on the cutting edge but after stroping I didn't notice that in practice.
    While sharpening I never leave the stone. If you allow that to happen the surface contact area is just the corner of the stone and that creates a massive pressure spike on the apex. This causes metal fatigue, reduced edge durability and sometimes even microchips along the edge.
    The bad spot you noticed could have been a microchip but since you fixed it by stropping I'm thinking it was probably a burr. That cross hatch pattern was created at higher angle so that creates a resistant burr that doesn't go away when you use the lower angle cleaning strokes.
    This is one of the reasons why I like microbevels, easy burr removal.

    I elevate my stones with a short bit of 2x4 with wide rubber bands over either end, to keep both the stone and the wood from moving. Of course, 2x4's are also a delicacy in Oz...

    Feel like the cross hatched scratch pattern was from when you were going back and forth. You probably dipped a few time and hit it at a steeper angle, so as you progressed and held the same angle you didnt actually refine the scratch pattern all the way to the apex

    There is nothing wrong with going back and forth when sharpening. When raising a burr, it doesnt matter at all.
    When you deburr you just want to do single strokes on each side so you bend the burr back and forth until it comes off. You also want nearly no pressure at that point.
    If you deburr properly on stones you wont even really need to strop.

    If you watch to the end it’s gatorade he is using on the stone and drinking. My freehand sharpening is not very good. Maybe there is still hope for me. I have been watching for years and appreciate the videos. Thank you.

    the cross hatch is the factory edge. your angle was off towards the tip probably.

    Your strokes may be uniform but just a friendly tip...you want to lift your hand as you approach the tip. I made this mistake when I first started sharpening. If you don't lift the tip to match the curvature of the edge you're gonna get some wonky things going on towards the tip. Conversely, when you're down at the base of the blade near the choil you want to do the opposite. You want your off hand applying pressure slightly downwards towards the table. If you don't do both of these things you'll end up taking far more material off the belly than you do the tip and base and start losing the edgeline and belly of the blade. It's a super important concept to understand when freehand sharpening. I'm sure you're aware of all the knife sharpening channels on UA-cam but one I can recommend watching some videos from are guys like Jef Jewell. He goes over things like this in some of his instructional videos and will probably help you avoid some mistakes. You can't take a curved blade like that and bring it across the stone without dropping and lifting your hand is the short way of putting it. Hope this helps. You can absolutely match or exceed the edges from "modern" sharpeners when you master little skills like that. I'm not a huge fan of diamond plates (or CBN in this case). I highly prefer Japanese water stones for a variety of reasons. One reason is they'll teach you far faster, they'll point out the mistakes you're making much more readily. An excellent and affordable combo for average steels would be like a King Deluxe 300 and 1000 and then maybe a Shapton Ha No Kuromaku 5k or something. My first finisher was the Suehiro Rika 5k and it taught me more in a few weeks than I had learned from diamond stones in a year. Just my 2 cents. Remember to follow that edgeline!👍

    I find freehand is better than fixed angle at keeping the bevel even if you're constantly lifting your elbow. When I used to use fixed systems my tips would get fat bevels because you're coming from a single point so it just seems to be one of the downsides I could never get around. For your cross hatch pattern, I'm curious if you ever fully apex'd on the first stone or if those might be grind lines from the previous sharpening/factory edge. Then you could have just cleaned up that previous edge enough on the ultra fine to get it cutting again. I'm sure you were checking bur as you went, so I'm probably wrong but just a thought. As I watch a little further, if that's your tip, I think that is what it is is you weren't lifting your elbow and didn't fully apex the tip and some belly if I had to bet. Another great video.

    Commenting early in the video as an experienced freehand sharpener...if you don't lift your hand for the tip you're gonna create some problems for yourself. It's going to end up at a significantly more acute angle as the rest of the edge
    P.s. You aren't apexing on the ceramic stone by the looks of it. You wanna try to raise you angle just a tad to make sure that stone is doing its job and refining the apex

    your are doing great Pete the more you doit the better, the thumb trick is def a good idea, i did notice you were flexing your wrist which makes it difficult to hold the angle. locking your wrist and using your elbow and shoulder works best imo. either way thank you for all the amazing content

    Good video, but do not pull the tip off the stone. end your stroke at tip leaving about 1/8-1/4" of tip still resting on stone. Otherwise you will round or worse the tip with get grinded off slowly over time as you sharpen.

    i free hand sharp and i dont go to sleep until all my knives can shave
    usually i make sure its nice shave and not rough too
    im not an expert but i feel like you should free hand back and forth because its more fun and natural for you
    the reason is that after some time you will become really good at it no matter how you do it
    and when you can get a knife shaving sharp fast and easy then it would feel much better if its with the method you like more rather than the slow annoying one you hate

    I think outdoor55 did a review of the CBN stone and found his had a really bad "burr" along one or both edges. Let me be clear, I am not an expert. I have both the medium and fine Spyderco ceramic bench stones and they can be difficult to get used to. The "feel" is very much less satisfying than diamond unless you have the angle perfectly matched to the bevel you're working on. Both good and bad. In general I would consider the "medium" to be a fine stone and the "fine" to be very fine, when it comes to comparison vs diamond.

    That "old school" sharpening technique you're doing is fine except your falling off the stone which rounds off the tip. Each stroke should start and end on the stone

    the windex joke was hilarious the first time, then it was just funny for a while, then the sex party joke came and i spit out my windex i was laughing so hard. super great video! i watch a lot of outdoor55 too and got some dmt plates and then a 2 thousand and 5 thousand shapton and it has been working pretty well. i mostly sharpen kitchen knives so the fixed angle systems just took a long time with the smaller stones and the angles went weird

      I watch all his videos as well and got the sharpal dualsided benchstone and made myself a leather stop with diamond compound 3000. Most of my kitchen knives are vg10 and are "hair whittlingly sharp"

    I dont think freehand people are generally boasting about them freehand sharpening.
    I think its more likely they mention they freehand, and other people take it as boasting
    Edit: please buy yourself a stone holder. The knuckle clearance will make your life so much easier while sharpening.

      If you wrap a block of wood with sandpaper and strop gently you can keep the convexity of the edge;)

      KME has a convex stone guide that will do the job for a full resharpening. The rod has a curvature to it.

      dude don't listen to these guys. Sandpaper stropping on a convex edge is ass. Please just use your whetstones it's super easy, watch a tutorial on youtube, you just rock the blade, very easy.

      @@stroppystuff641 no it's not ass lol. You just have to use quality high grit sandpaper. Better than using the stupid kme sharpener. Also bark River knives are "ass" already, too thick, convex edges still deform from batoning even at said thickness.

    The "arrogant" back-and-forth is basically the technique that Japanese professional sharpeners use... But what do they know? Amirite? Seriously, though, the "swipe" is good for touch-ups or de-burring, but it is horribly inefficient for the bulk of the grinding.
    One of the best, most comprehensive video series can be found on Murray Carter's channel.

    Flattening isn't that tricky bro. That CBN stone would probably flatten a King stone up just fine. I don't know if they're made for that, i prefer Atoma 140 and 400 for that task. Just draw a grid with a pencil after you soak the stone and have at it with a flattening stone. When the pencil marks disappear you have a flat stone 🤷‍♂️

    Your back and forth was fine, just needs a bit of practice and burr management, which is essential for freehand. I did not see you check for a burr even once. Then finish off each side with a couple of stropping strokes on the stone. Oh, and you (and the missus) are pressing way too hard. Let the stone do the work.

    You don't need a lot of Windex for it to be fatal. It takes a week or so of kidney and liver failure to finally finish you off, but it gets the job done.
