    I have just made my first batch of white currant jam following your instructions. It looks and smells amazing. I had a taste before I poured the setting liquid into the jars and it tastes great too. Thank you for this recipe. I have subscribed to your channel.

    I just finished processing 5 quarts of white currants. It is much easier to remove the stems if you freeze them. It also aids in juice extraction. I take a meager handful and rub them between my palms to remove the stems. Separating the stems is easy with a textured plastic tray like you would find at a cafeteria or fast food shop. You place them at one end of the tray, and lift that end until the frozen berries begin to roll. Tapping the tray with your fingertips can move things along. The berries roll and the stems/chaff do not.
    I prefer to strain mine with butter muslin cloth. One cloth is in the strainer to filter the juice, and another cloth is wrapped around the berries to squeeze them dry.

    Simple and easy to follow - thanks! Have you ever made this without straining the fruit - is it really so important? (lazy cook here!)
    I plan to combine white and redcurrants (about 50/50) - do I need to do anything different?

      straining removes the seeds, I find these a little chewy so personally I would not skip this step. Mixing the currants sounds good to me! I hope you enjoy the recipe!

    How much sugar did you use? Just harvested the white currants from our back garden

    I have grey current here in yakutat Alaska I’m thinking this is as close as I’ll get.

      I've not heard of grey currants before. Do you have redcurrants? Redcurrants would work well.
