Good job on the 1st brisket. Always put the fat side up. The fat cap will melt down into the bottom portion if the meat that is lean. When you put your brisket on the grill try not to open the hood AGAIN until you are at least the 8 hr mark. If you looking you aint cooking. You have the benefit of a pellet grill. So you can continue to load in the side and most of all keep the grill at a regulated temp. Each time you open her up you loose temp. ❤

Get you some probes ( wired or bluetooth) so you know when your meat reaches the desired temps. There are many things you could've done differently, but what matters is if you and the fam enjoyed it. Marking the direction the grain runs to start and cut against the grain will help with the mouth feel and chew and wow the folks consuming it. Also, flip the point and cutslices from edge to edge; I like to use the electric knife to cut time and protect my bark. Thanks for the video.

The point is the best part you have to put in the freezer and cut it when it's firm. Because when it's room temperature it's to soft and it's harder to trim. You have to trim your fat down to a quarter inch and so some of the fat protects your meat. And after the brisket render down you want for your brisket to finish at 202 to 204 internal temperature.

I agree. Butcher paper absorbs too much water and can easily dry your brisket out. Foil is so much easier to create moisture.
