    Watching this & your apple pie video from Malaysia. I've never tasted an apple pie this simple & this tasty ever in my life.     THANKS... to "12 years ago"! This is the best Pie Crust Recipe (and, explanation). We're long-time holiday pie makers. We used this recipe for two scratch pumpkin pies. Our guests agreed... best ever. We followed suggestion for good butter (Irish) and weighed the ingredients. The dough was overnighted to cook the pies on Thanksgiving morning... before popping the turkey into oven. The dough handled and rolled out very well. Thanks again!

    This was an excellent video. I loved that you kept everything real time so that you know how long to do everything. It really limits the amount of time one spends going backwards in your video. And you really are clear and easy to understand.

    Thank you soooo much for the recipe, I just made apple pie and stuffed the remaining dough with cream cheese, cinnamon and sugar and everyone was fighting for a piece. It has such a delicious buttery flavor to it like I never tasted in a crust before

    Yes, you can use it for a savory pie. This is the pastry I always use to make chicken pot pies.

    Stephanie: I used your pie crust recipe. It was the first time that I used my food processor to make pastry and I followed your instructions. The pastry was flaky which I liked. When I used my hands to make another butter pastry it was not flaky. Thanks for another great lesson.

    I've been using this recipe for 25 years and the measurements are correct. It could be the type of flour you used as different flours have different absorption rates.

      Thank you for your wonderful instructions, informations too.
      I appreciate the measurements you provide in grams (less work for me).
      Measuring all my ingredients using a scale means I can be consistent.

    This is wonderful pie crust. I made my first pie crust in years using this video recipe. I replaced the water with cherry infused vodka because I was told it would make it more flaky. Now, I'm not sure if it made it more flaky but the flavor was amazing.

    Pastry does take a little practice. When you are placing the pastry into the pie pan try not to stretch the dough as this will cause shrinkage. Also, make sure to gently press the pastry onto the bottom and up the sides of your pan, pressing into the edges of pan. If prebaking line the pan with parchment and fill with pie weights or beans (rice) to prevent the pastry from rising.

    OMG! Thank you so so so much for sharing this yummy and delicious recipe. I followed your recipe step by step and I made the apple pie but in the cup cake tray. Also, I followed your recipe for the apple pie and I did let the apple slices , brown sugar and the other Ingredients for almost one hour. Oh my gosh it was so so so yummy. The apple pie didn't fall and the apple cooked very well. I'm really happy for the incredible result, this is my first time making apple pie though. May God bless you and your videos.

      I made the bottom and sides with my hand jus like her. Also, the temperature was 335 F for almost 45- 60 mints.

    There is leftover dough, half the dough can be rolled fairly well to fit and flute in the first attempt to the dish size, not very difficult for you, but not rolled wider and go around cut the dough. The leftover is questionable and ends up in the garbage. China stopped buying our recyclable waste because way too much food waste shipped along with it, the accepted level is 15%. years back fellow employee at Marriott will creak 12 eggs to coat half tray of breaded Zukini and end up throwing 90% of it. Also, a young woman weekend cooking show on PBS was demonstrating how clean and cut green beans. Cutting about 1 inch on both ends, what a waste, my mother would have cried. The dough is not only valuable money and time goes with it. YOU ARE PRETTY GOOD in your shows we LOVE you dearly.       I've learned a pastry blender works just as well as the food processor and in my experience it keeps me from overworking the dough in the food processor.

    I have been making this crust for probably 20 years using these measurements. Sometimes, though, depending on the absorption of your flour, you may need to add more flour.

    The ratio is different because butter and flour have different densities. Different ingredients will have a different weight in grams for equal volume in cups. Watch my weight vs volume video for more information on this.

      Crust will be a bit hard and tend to break but u need to keep joining to maintain a circle intact. And hold it with rolling pin.

    It really depends on the recipe. Sometimes if the baking time for the filling is short, you want to pre bake the crust. Other times, like with some fruit pies, the baking time for the filling is quite long so you don't have to pre bake the crust. Unfortunately, there isn't any set rules on this.

    You are right though, it does take practice. I started making pies in my early 20's and over the few years i have perfected it. In my own way of course. Though, I will never for get my first crust I ever made, and you right, i remember having to literally stitch it back together after rolling it out and it ended up shrinking after it was done. Never new why. lol! That doesn't happen anymore but As I watched your video I know now why it had shrunk!

    Yes, pastry made with butter can be a little difficult. It has to be at the correct temperature. Too hard and it cracks, too soft and it sticks. It just takes a little practice to get the feel of the pastry.

    Ive made it with using unsalted butter and using regular butter and it came out good both ways I used it for chicken pot pie

    Yes, if the dough gets too cold it will crack. If that happens just let it sit on the counter for a few minutes to warm up and then try rolling it.

    wow excellent video of making the pie crust in a food processor! (i've been researching to get one.. because i've made pie crusts by hand a couple of times over the years which turns out great but is a lot of work and very messy lol ) and I never knew how to do the fluting of pie crusts even though i've tried I just can't seem to figure it out... I enjoyed actually being able to see it done and i have def been doing it all wrong when I have attempted this method lol... the easiest for me was the fork way is how I had originally learned ... I also learned to tuck under the extra dough I had no clue either till watching your video I could just cut that extra dough off... Thank you so much for this video and the step by step instructions and actually talking and as your showing everyone how to make and do a pie crust this helps so much... I do have one question once its all in the pie plate do I need to prick the bottom of the pie crust with a fork? I am asking because i learned your supposed to with like pumpkin pies n that and to prebake but now a days most the pie recipes say that pre baking the pie crust is not needed? I also have made your pumpkin roll recipe and I love it I did not realize how easy it was to make them hahaha and i'm 44 yrs old

    Normally when I make a quiche I prebake the crust. Normally that takes about 20-25 minutes. If you like you can watch the "prebaked pie crust" video where I show how to prebake a pie crust.

    Unfortunately, pastry is all about technique and getting the "feel" for the pastry. Too hard and it cracks, too soft and it sticks. With a little practice I'm sure you will learn to work with the pie pastry.

    Fantastic videos I will most likely make your pecan pie for dessert at Christmas. I make everything fresh except the dessert which is usually store bought to save time. They always fall short though. I intend to make this on the day with no rehearsal and will upload a video so you and your fans can see how great your tips are :)
