For the Desert Temple, digging the sand out exposes a secret room. For the Trail Ruins, they usually aren't in water like the one you found, and you would just dig the gravel to expose the ruins. There are usually pretty cool things inside like Blast Furnaces, Upgrade Tables, etc.
@TheAmbear_ Another bit of information! If you haven't found it yet, the secret desert room sand can contain Diamonds! I'm not sure about any of the others. Sniffer eggs come from warm ocean ruins strange gravel. Also, you can add unbreaking and mending to your brushes so they don't break as quickly. Hopefully, in the future, we will get other enchantments for them!

Hi new follower here just a tip for the sniffer egg you want to look for a warm ocean or a desert the could be in the temple but you have a batter chance of finding them in the warm ocean ruins and boats sometimes deserts and warm oceans sometimes spawn near jungles
And also for the temples you wanna dig all the dirt up make sure you don’t break any suspicious sand while you do that and you find a bunch of suspicious sand in the temple you have to break the regular sand tho

And if you're in the ocean and you have some fish go to dolphin and feed the fish to the dolphin because if you feed the fish to the dolphin it will show you trussell

I think your top priority should be nametags. So when you bring home animals from far away they won't despawn if you go mining or something.

With the new camel update you can call you frollowed by holding the jump button
The celestial egg will take 20 minutes to go but if you put it on Moss only takes 10 minutes
