Dr Been I really enjoy when you discuss foods and how they affect our body, it so much more interesting to know what food is doing to us and why eating this or that can help us. Really enjoyed your diabetes segment too. Also helping me to understand what inflammation is. I don't always catch you live, but I always look for you putting up new videos and watch every one of them. Thank you so much for your work.
Most, if not All people who have diabetes are deficient in zinc. Zinc binds to the hormone (insulin) so that its stored in the pancreas and is released when glucose enters the bloodstream. Without zinc the pancreas will become impaired because it NEEDS zinc to function properly. Diabetes, in my opinion is a result of key vitamin and mineral deficiencies. Once you address those underlined issues you see results and can turn it around. I'm a strong advocate of sodium bicarbonate in moderation. Informative video!
And, remember, eating plants contributes to these deficiencies: 1. Phytates (Phytic Acid) 2. Oxalates (Oxalic Acid) 3. Polyphenols (Tannins) 4. Saponins 5. Dietary Fiber 6. Lectins All of those plant defense chemicals reduce the ability for humans to absorb and/or metabolize zinc (and other minerals). Meat, sea food, and other animal products do not contain those chemicals, and will result in significantly higher absorption rates for zinc (and basically every other nutrient).
In Ayurveda (traditional system of indian medicine) lot medicine (mineral med) are there , one example is Vanga bhasma (Incinerated form of mineral Zinc)
10+ years ago I had horrific IBS symptoms. I didn’t know how to cook for myself and every Sunday we would order takeout. Oh man I felt like my insides were on fire. When I changed to whole foods, the fibre was uncomfortable for a bit but cured my IBS. I never knew why until today, so thank you. Unfortunately I can’t have yogurt as I’m allergic to milk, and curcumin does weird things to my hormones. Nevertheless it sounds helpful for others and I’m grateful for your knowledge.
Thank You Dr Been for keeping us updated on latest research. Your practical tips in this video are really a life saver for many of those who will follow this.
Great breakdown of AGEs and ALEs, but should acrylamide have been included too? It’s highly relevant when discussing frying and high heat, especially with breading or charred crusts in starchy foods. Since acrylamide forms through the Maillard reaction between asparagine and sugars at high temperatures, and poses potential health risks like neurotoxicity and carcinogenicity, wouldn’t it be an important addition to the conversation?
Doc, throughout this talk you tarred all fats with the same brush. Are you suggesting that coconut oil produces roughly the same amount of ALE as mustard oil, for example?
High heat cooking causes AGE and ALE in food being cooked regardless of the medium in which these are cooked. For the fats themselves, saturated fats are less facts are less prone to making ALE products however these are not immune. And, finally, when saturated fats are repeatedly used for frying, they will produce ALE products because of the continuous degradation.
It never ceases to amaze me how mainstream Doctors' and those in the natural health and wellness community LOVE to throw out the baby with the bath water when you don't have to do that! There are ways to work around the land mines, so to speak, and still enjoy the foods we like to eat. All about knowing how to neutralize the culprits making them ineffective and harmless! Great point!
@@Kathleen253 Just depends on where you get your peanuts from and how you neutralize the culprits. Peanuts carry the toxin aflatoxin as well as lectins, phytates, and oxalates. However, there are ways around all of these things. I always say you don't throw out the baby with the bath water. There's always a work around without causing any harm.
In addition to curcumin and black pepper in yogurt, the following are also anti-inflammatory and add flavour: pureed root ginger, powdered ajwain, and cinnamon. The latter two have a strong tastes so only add a little and experiment. I like to let the mixture mature over night in the fridge especially if adding the last two. In case that this is too healthy, I then tone it down a bit with a dribble of Maple Syrup.
Obviously fried foods are not bad for everyone depending on the fat your frying with , good quality animal fats are good for you and can help with your diabetes
These are key examples of how we can keep the baby and throw out the bath water! There is ALWAYS a work around these food traps and culprits. We can still enjoy certain foods we like but it's all in knowing how to prepare them! Excellent point!
Given the strong endorsement of curcumin as an antioxidant, plus most societies today have too much refined / processed foods on the supermarket shelves (how many can grow all own organic food?) - then would you recommend that curcumin be a regular supplement? And when you say "high heat low water" - deep fry is definitely so, but what about Chinese stir fry? It is high heat, but less oil, and fast. Not the same as deep fried chips which are soaked inside oil pot. Also a few comments below differentiate between natural oils (coconut, butter, lard) which being saturated will oxidise very little - the definition of saturated. But the reality is that many fried foods are from vendors, e.g. fish & chips, KFC. Unless you fry everything at home, using coconut oil or lard.
One of my relatives with diabetes loves to eat everything fried 😢 his diabetes started after a heavy dose of antibiotics to treat a stomach ulcer which was caused by a bacterial infection after a food poison
I heard that black pepper increases absorption of many things by irritating the gut and making it more permeable and that it is not good. I also heard that piperrine increases iron absorption many fold and too much iron is not good. Is that true?
There are several chenicals in plants (not just pepper) that contribute to gut permeability (a.k.a. " leaky gut"). This is why a huge majority of people on plant-based dietd have G.I. issues. Humans simply don't have the digestive hardware to handle plants well.
I have been thinking about the bad publicity eating meat has concerning health .After hearing this talk it reinforces my theory that the problem with meat is in the frying. Also fast food meat is served with bread and sugery drink.. The people who call salad rabbit food probably have limited gut flora unable to digest salad
As a fellow South Asian, I would like to know about Dr. Mobeen's opinion on the downsides of foods like kebabs and biriyani in the context of this video.
Will coconut yogurt work the same as dairy yogurt? Also will I be able to gain any benefit from curcumin if I don't take with black pepper? Black pepper causes my intestines to become inflamed.
@Kathleen253 Hello there! Curcumin seems to require black pepper to make it more absorbable, because it is extracted/removed from the whole root of Turmeric. Turmeric is from the Ginger family; Zingiberaceae. Turmeric, Turmeric powder has a warm, bitter, black pepper-like flavor and earthy, mustard-like aroma. It is a Whole, complete nutritional complex within itself and does not require adding another spice to help with absorption. Why not use the Whole Food? Coconut yogurt that is unpasteurized, and fermented to activate live probiotics, one that has good living bacteria added will work nicely. I hope this helps.

I use curcumin almost on daily basis. I think it's important to use it. You are correct Chinese stir fry is better than for example deep fry.
Our stomachs are among the most acidic environment that exist, so what is the reason to eat acidic foods to counteract those bad foods?
It's the acidic cooking environment that helps reduce the production of AGE and ALE.
