    YES, you CAN fire roast in a pot (UNCOVERED). Roasting the veggies individually over a fire would take forever for a large batch like this. As others have done, you can achieve the same roasted flavor by cooking your recipe (Uncovered) over an open WOOD FIRE, in a pot. Gas grills will NOT give the roasted flavor in this method and that is why some of you are confused. Wood fired foods are always more flavorful. It was my fault for showing the pots covered in this video as the pots are actually uncovered during the thickening process over the fire. If you cook your salsa over a wood fire like I have done, you will achieve the SAME FIRE ROASTED FLAVOR as the better salsas in the store offer.

    Never tried fire roasted but the salsa I made last year, my children loved. Ended up making quite a few batches and ran out before spring. Make sure you get enough rest Jaime. As someone going through cancer treatments myself that's really important.

    Love salsa gotta make some next just did a batch of tomato sauce. It could be used as salsa.. a good way to get flavor is to use as many types of tomatoes as possible especially those big heirlooms. On another note Jamie we all admire your strenth your drive and your will to succeed in everything you aspire to acomplish .push on and proove it can be done. I lost my dad 18 months ago to throat cancer.its a hard road but he was 74 and age matters.

    Great tips, will try your recipe hopefully if we get enough tomatoes. I also love your outdoor kitchen , I plan on building one myself but a lot more primitive. I plan to use mostly cob and your evaporator, great idea, I'll have to make sure mine will be deep enough to water bath. We are all glad Jamie is doing better and hope all is well with you all.     It's so good to see Jaimie back in the videos.
    I add shredded zucchini to my salsa as a filler. It aborbes all of the favors around it. Definitely lime juice, and don't forget the cilantro

    I buy organic tomato specifically to add to thicken my salsa. It's such a game changer. And organic is so much more flavorful and isn't very much more expensive

    I've made your salsa from a recipe a couple years ago from your website. Its the only salsa I make, very good! I miss seeing Jaime and I'm so happy she looks like she's doing really well. Praying for y'all. I also miss Jaime's parents. Are they doing well? Hope so.

    HA! Not being able to find a decent salsa at the grocery store prompted me to finally try my hand at making some. And, I fire roasted some Roma tomatoes, Serranos, a Jalapeno, a Poblano, some red onion and a bell pepper on my gas grill. Once it was done, I peeled the peppers and tomatoes, then blended them with some garlic, season-all salt and Cilantro. Turned out great. Will make a much bigger batch, next time.

      Search google for "manual food processor". Find one with good reviews. They are not that expensive and boy do they save time!

    Fire roasted sounds yummy! Thank you for the recipe.
    We do a few jars every year with Baker Creek ground cherries. Just something a little different and fun, adds a sweet, slightly tropical taste. Of course traditional is our favorite.

    When I make home made marinara sauce I always fire roast the tomatoes. It's a whole a other level! I fire roast the red and yellow and green peppers as well. Put it in a food processor and the sauce is to die for!

    My mason jar lids always get rusty and unusable in less than 2 years time. Do you have this problem? Do you just replace them often? Would you use the plastic lids instead or are they not as useful for what you do?

    Fire roast the chillis and peppers directly over your fire THEN add to sauce simmer over fire BOOM!

      Yes, this is the true meaning of fire-roasted. You fire roast the fruit (tomatoes and peppers) before your cut and blend......not in the pot. Just saying......

      There are lots of people who make their fire roasted salsa this way. For small batches, the way you described would be fine. But this batch was over 80 tomatoes, 2 dozen onions and 2 dozen green peppers and at least that many jalapenos. That would take forever unless you have a large grilling area. Doing it this way was an idea that we got from others and the flavor is the same as doing it the other way with smaller batches.

    Fire roasting isn't cooking the salsa in a covered pot until it reduces, it's roasting your vegetables over the fire , pre cooking them, before you chop them and boil them down...

    Its a matter of taste and preferences. I have a recipe from 15 years ago, a fella that now owns 4 very profitable restaurants. He is Hispanic and based his food on his family's traditional cooking. I don't sell it (his request) but I make it by the gallon and its gone in a day my family devours it.

    You should try Tattler lids. They are reusable and will cut your long term costs, not too high (about double on the disposables).

    This is not intended to be condescending, only instructive:
    "Fire roasted" means roasting the ingredients BEFORE adding them to the pot.. It doesnt mean heating up your salsa over a fire pit..
    For instance: open-fire roasted green chiles will be completely different than putting green chiles into a pot and placing the pot over a fire.
    Take your ingredients (before chopping), place them onto your grill, let them get a little blackened by fire and smoke, THEN chop them and throw them into the salsa pot to reduce down.
    Im sure your salsa is fantastic. But when it comes to terminology, this is an accurate description of fire roasted. Give this method a try some time, and im sure youll notice a big difference (which might be better or worse, which isnt the point)

      Who set that definition? Nope, lots of people fire roast their salsa this way. For large batches, doing it that way would take forever. FIRE roasted salsa has to take place over a FIRE. The resulting flavor speaks for itself.

    That is not salsa. That is a picante sauce. To be fair, nearly every picante sauce that I have ever seen has been mislabeled as 'salsa', and I can understand where a body might get confused. 1) do NOT puree your tomatoes! 2) hand chop your peppers and onions. Using a food processor leads to too many tiny bits and too much juice. 3) cilantro really isn't optional in a tomato salsa. When you use cilantro, also use lime. 4) To fire roast a pepper, the pepper itself needs to be in contact with the grill, not in a kettle. AND 5) Never NEVER cook salsa. When you cook a salsa, it stops being salsa./// Your picante sauce looks pretty good for what it is, better than what they sell in the supermarket … but I implore you to try salsa sometime, it is life changing. Ps: I love your canning set-up, that is outstanding!

    Fire roasted salsa means they roast the vegetables on a fire before they make the salsa. The process you used was reducing, simmering or boiling until the liquid is reduced and thickened.

      No, lots of people will fire roast this way. Roasting individual veggies over a fire would take forever and people only do that for small batches. This is a large batch that made 37 jars.

    id recommend fire roasting the veggies straight on the grill, then seal em up to steam, peel skins then normal salsa process. thats what i do anyway, just seems like more grill flavor actually will get into the veggies that way.
    plus too chiles are usually fire roasted and steamed like this, tomatoes fair pretty well in heat and lose some juice, aand finally you get nice brown caramlized onions after a little while of cooking without even having to peel em before hand

    Great video but pretty sure fire-roasted means that the tomatoes are physically roasted over the fire before you peel them. I’ve made tomato basil soup with tomatoes I roasted over the fire. AMAZING!

    Ehm, fire roasted means the tomatoes / peppers have been on a (charcoal) grill for a bit, it doesn't mean the cooking-down-with-lid-on-the-pot has been done over an "open wood fire"...
    At least .. commercially that is what it means.

      The other veggies would normally need to be pressure canned. But the high acid of the tomatoes and the added vinegar in the recipe makes it totally safe to do.

    Forgot salt, black pepper and fresh garlic. Fire roasted isnt necessary if you take the seeds out of a few tomatoes and roast the skins in a frying pan, or on a grill.

    I recently moved from San Diego to Knoxville Tennessee. I love it here but man there is NO GOOD SALSA air Mexican food for that matter. It all tastes like ketchup with cayenne pepper in it.

    Fire roasting means that the fire TOUCHES your food. You get some char on the veg. Boiling over a word fire is NOT fire roasting

    That's clearly not what fire roasted means sir. The veg would be roasted over flame. Charred bits in the salsa. Slight edit.. that's fire boiled.

    You should actually try “fire roasting” your vegetables. Lay your onion and peppers on the grill to char the skin. That is fire roasting !!! Garlic!!! Must roast your garlic.

    You say your salsa is fire roasted, but I didn't see you roast any veggies ,I did see you fire boil it !
    Please I am not saying it dose not pick up a Smokey flavor !
    I put all veggies on big cooking trays ,then fire up wood smoker for 25 to 30 min and then all veggies are fire roasted, then put into pot and mix and stir and reduce from there !
    I say try a small batch that way for your self and see the difference! Good luck and good salsa making !

But this batch was over 80 tomatoes, 2 dozen onions and 2 dozen green peppers and at least that many jalapenos. That would take forever. Doing it this way was an idea that we got from others and the flavor is the same as doing it the other way with smaller batches.

    That is NOT fire roasted!! Maybe fire boiled & looked more like tomato juice!! Nice set up tho!

    As delicious as that looks it's not fire roasted, it's cooked salsa. For it to be fire roasted you would need to char the fruit over a fire before blending them.

      Nope, lots of people fire roast their salsa this way. For large batches, doing it that way would take forever. "Cooked" salsa can be done indoors. FIRE roasted salsa has to take place over a FIRE. The resulting flavor speaks for itself.

    Just saying, you're fire roasting a pot. None of the salsa you're making is fire roasted. Fire roasted comes from the peppers being charred by a flame. Not the vegetables in a pot over a fire. You're just saying as long as i water bath can items over a fire, it's all fire roasted. All love though. That water bath canner is so cool!

      Roasting the individual peppers and veggies would take forever for a large batch like this. It was my fault for showing the pots covered. They are boiled uncovered for this whole process and the smoke and ash make their way into the recipe. It gets the same flavor as roasting the veggies individually. Actually better flavor since we are using WOOD fire instead of propane fire on a grill.

    "Fire roasted" means to remove the skins of the vegetables by charring over fire. Lol. Not cooking the batch over a fire!
    Not dissing cooking over fire, but those bottled salsas aren't cooked over fire.
    There should be at least an inch of water over those jars to get them canned properly.
    I'd advise a newby to canning to get your directions from Ball or Kerr.
    Most salsa is way chunkier than that!
    That is taco sauce.
