      It's a beautiful blessing to have so much of her on video for our family to view anytime we want. Her boys will never forget her laugh and her smile that was so contagious. She wanted nothing more in this world than to see her boys grow to be strong and faithful men. I'm doing my best to make sure that happens and that she will not be disappointed.

      Single older male here, and as a few others commented, It's a joy to watch her work. I was wishing I could meet a woman like this, and saw she had no ring on her hands. It never occurred to me that she took it off for this. My apologizes, and my condolences for your loss. God always takes the good ones first! Sometimes it seems a bit unfair of him. But I'm sure he has a bigger plan.

    I still come back for a refresher when I haven’t made it in a while. It was Jamie’s video that was the easiest to follow when I started out. She was such a sweet lady and I think of her each time I make cheese!

    I was watching the latest Gridlessness upload and a woman posted that this beautiful wife and mother has passed away. I was compelled to come to this channel and express my sincere condolences to this wonderful family. My heart goes out to all of you. Each of you are in my prayers. I am aware that nobody truly get's over a loss of this magnitude... Still... I pray that you will all find a place where it becomes easier for you to bear this unimaginable burden. I am certain that it is her most deepest desire that her family goes on while continuing to live their independent and inspirational lives in the fullest and most loving way imaginable.

    This is the first video I've seen. A friend just told me this beautiful soul with such a bright and contagious smile has lost her battle with an illness. Her family had to endure their aching loss around Thanksgiving. Please keep this family in your prayers. Having only seen this one episode, I can still say and mean that I miss you Sweet Soul and Thank you for sharing your tips with us!

    I am Australian of rural Italian heritage and we made and grew everything ourselves, largely out of necessity in rural Australia, with poor transport and no access to shops. That included butter and cheese. The Aussies made cottage cheese (not sure how but we hated its sour taste, so we stuck to our own form of ethnic cottage cheese or mozzarella and ricotta). We made it from goat milk and using rennet, derived from calf stomachs, in case you were wondering what rennet is. The method was pretty simple. You make a junket using the rennet, heat it to the right temperature to roduce your first lot of the harder chease and gather it up and put it through a cheese clother over another container to strain the whey out of it. Then, you take what liquid remains in your pot and boil it and more cheese comes to the top. This is ricotta, which, in Italian, means "Re Cooked" ie the second time you reheat the liquid, after the first lot of cheese is made, the harder one, which won't become harder until you mature it a few days or weeks. By tying up the cheese cloth it is in to form a knot and hang it up to try and mature, harden up. With the ricotta, you cannot keep it to mature it. Best eaten very fresh, even still warm, after straining it through a fine sieve. Typically fed to babies (like the calves' rennet it comes from). Nice on fresh bread or served as a dessert, with cream and honey etc. You can make it with vow milk but I would avoid store bought milk because it is very processed, to keep it appealing to shoppers. Straight from the cow is best but mind any diseases caused by improper handling and pasteurisation methods.However, many prefer to use the traditional authentic sheep or goat milk, like the mountain dwellers in the originating places of such cheeses used. I am wondering how the Greeks and Bulgarians make their Fetta and Haloumi cheeses I like. Italian Gorgonzola, like other blue cheeses is basically "rotten cheese". So is Camembert and legend has it, these methods were discovered by accident, when cheese accidently went off, got ruined. They tried the ruined cheese and discovered they liked and started to deliberately ruin batches of good cheese. It is interesting.

    This the first video I've seen. Something in her made me to keep watching. I wanted for long time to learn making Mozzarella cheese. I guess she wanted to teach me the easy way. The I read some of comments and learned that this beautiful soul has passed away.

I am am proud, newby to milking my grass fed, organic raised, Jersey cows. They are the love of my life. I love the cream, I love the butter, I love the cheese, I love the cows and I love you!     BTW I use the whey to soak and cook my beans. I make ricotta. Ricotta cheese is traditionally made from whey. And it’s so incredibly easy! However, this will require the whey to be heated to 200 degrees, so all the raw enzymes will be lost. I like to make ricotta when I have gallons of extra whey, and then I freeze it for making lasagna later. Use the whey to stretch your mozzarella cheese instead of water.

    i found your channel a couple of months ago, around the 1 year anniversary of this sweet woman's graduation to heaven. your content is excellent, so very helpful, but i've avoided watching the cooking vids because it makes me sad knowing that you are missing her. i REALLY wanted to know about the cheese though, so here i am finally. know that i will use her recipe and i praise God for her knowledge. i hope your family continues to mourn well.     So I have wasted 4 gallons of our raw milk, trying to make mozz cheese! HOWEVER, now that I found your video and watched it I believe your technique and process is the one I was missing and all the other recipes I was trying. I cannot wait to try this! Most the other videos/recipes i tried did NOT incorporate the hot water bath process!!! I truly believe that this is what my cheese was missing all the other three times I tried. All three times my cheese resulted in rubbery hard cheese! Although it wasn’t really wasted because my chickens enjoyed it, AND I gained knowledge each time I attempted it! Like you pointed out, we have to be willing to fail!! But not to give up! This is what happened when I first embarked on making my own homemade breads, especially sourdough breads. The first few batches of sourdough failed but now I can thankfully report that I make a mean sourdough loaf and love every moment of it! Thank you for your videos & channel! Thank you for allowing us into your kitchen and thank you that you’re willing to share your knowledge and secrets! May the Lord bless you!

    I bought the thin, long ice cube trays. After stretching my cheese I rolled it into a "rope shape" and broke it off to fit in the ice cube trays. put one tray on top of the last until all my cheese was in the forms. Weighted the top down for an hour, then put them in the fridge in a zip top baggy. I had "string cheese stix" just like from the store. My grandbabies love them.

    I use the largest syringe (without needle) to remove the cream from my raw milk. The spoon is a really nice addition to the utensil arsenal. Yes, making mozzarella cheese is a great skill to have. Great instruction.

    First time watcher, and love your attitude and fun with making this cheese. I have subscribed because I want so see more. Your Berkey filter had my jaw drop to the floor, hubby Ed saw me and ran over to see what I was looking at. He saw the Berkey and wow. In California we are not allowed to purchase that lovely mother ship. We can only have the much smaller filter approved by our Governor. Still a Berkey is a wonderful, easy to use, filter for us.

    Jaimie was the epitome of the Proverbs 31 woman & I am thankful I had the opportunity to tell her that before she passed from this life into the arms of Yeshua. She was an inspiration to so many of us women & to be honest she was wiser, harder working & way more selfless than most women (or men) that I know. Jaimie accomplished more in her short young life than most of us do in 60 full years. She was the perfect example of what true beauty is both inside & out-the very embodiment of Proverbs 31:10-31. "May her deeds praise her in the gates."

    People have been absolutely thriving on raw milk for thousands of years, but we can't get it in MI. The "we're from the government and are here to help" is SO old now.
