    I think that one obvious pairing would be your Tequila Lime Shrimp for some Surf ‘n Turf action!!!
    Other sides along for the ride would be some Garlic Mashed Potatoes made with Chicken Broth for extra flavor with Sour Cream.....plus Brussel Sprouts first steamed or blanched, then sautéed in butter and olive oil seasoned with SPG, then topped with a reduction glaze of Balsamic vinegar with a splash of OJ.
    Music choice would be another Texas staple (besides steaks) would be some George Strait for country and/or Eagles for rock.

    I like to use coarse ground pepper. And I like to grind it myself. It tastes fresher I also like to add garlic and grated(microplane) dried shiitake mushrooms to my melted butter.
    For a side, I like to do a twice cooked potato. Cook it in my pellet smoker for about an hour and a half at 425 degrees. Cut potato in half and scoop out potato in a bowl. Add butter, sour cream, cheese( Freshly grated) and chopped green onions and salt and pepper Mix up mixture and add back to halves. Top with more cheese and crumbled bacon. Put back in smoker till cheese is melted and toasted.
    For music, I am a ZZ Top guy. And my favorite beer is Stella Artois. But some days I like my bourbon. Been drinking a lot of Belle Meade lately.

    Great looking steaks, I like to bring mine up to temp slowly also. That PK360 is a pretty nice grill, unfortunately it is made in CHINA. Wish I knew that before I purchased mine....

    What a perfect, succinct video on a great reverse sear. Our go to side for filets are "vinegar potatoes". Roasted fingerlings on the grill tossed in a mayo/sour cream/dijon/red vinegar/dill cream sauce. They are to die for. I'd be happy to share the recipe! These pots change your life!

      @@Gquebbqco thanks for your reply. I have a question. Would I be able to sear the steaks first and then slow cook and achieve the same seamless cook all the way through? I wanna make 10 Filets on Christmas Eve but there’s no way to fit 10 on half the grill so I was thinking to sear all 10 on my PK then putting them in the oven At 250 and probe a few.
