The Best Doi Mach Recipe

- Ingredients:
500-gm rui or mrigel
¼ tsp turmeric
½ tsp salt
3 tbsp cooking oil
2 bay leaves
7 cloves
2 medium onion paste
½ tsp salt
¼ tsp turmeric
1 tbsp ginger paste
½ cup yogurt + 1 tsp sugar
¼ tsp garam masala
½ cup water
4-5 green chilies
2 tbsp friend onions
Instructions:
1. Coat fish pieces well with turmeric and salt
2. Fry in cooking oil until light brown then set aside
3. Using a separate pan, add cooking oil, bay leaves, cloves, onion paste, salt to taste and turmeric
4. Stir in ginger paste and sauté for 5-6 minutes on medium heat
5. Gradual splashes of water while stirring continuously
6. Lower the heat and add plain yogurt
7. Sauté for another 2-3 minutes
8. Add garam masala and fish pieces
9. Pour water and add green chilies
10. Cook for 4-5 minutes with lid on
11. Garnish with friend onions
12. Ready to Enjoy!

It's a mouthwatering recipe. Though colour would be much better if we use pinch of red chili power and omit turmeric. And traditionally we put few raisins also.

Doi katla tends to be whitish, so i think they were avoided intentionally
@@payelmukherjee4683 sarodiyar suvecha. Yeah that's why better to avoid turmeric. And pinch of red chill powder does not make it red gives a nice tone in the whitish doi maach. Moreover, it;s personal choice. But traditionally turmeric is to be avoided that's why I wrote.

No it's not true I am Bengali so it depends which dish u r making if that dish requires less garlic then we use less if it's not then we use as much required for making that particular dish.
