Salted Fish Bean Sprout | Easy Stir Fry Tauge Recipe

This chinese stir fry bean sprouts with salted fish recipe is easy to cook and great for an asian style weeknight meal. The bean sprout aka tauge / taugeh only needs to be stir fried briefly. It has a nice crunch and able to carry the flavour of salted fish, garlic, and chilli throughout the dish.

The full recipe is below

200g bean sprouts, washed and drained
20g salted fish, diced
2 cloves garlic, chopped
1 birdseye chilli, sliced thinly
½ tsp soy sauce
¼ tsp white pepper
1 stalk spring onion green, sliced
Vegetable oil
Fry salted fish in vegetable oil on low medium heat until golden brown.
Set aside.
In the remaining oil, fry garlic and chilli on medium heat for 1 min.
Add bean sprouts and fry for 1-2 mins while coating well in the flavoured oil.
Add soy sauce and white pepper and mix until combined.
Add spring onion green and salted fish prepared earlier and mix through.
Serve immediately.
