  • Chicken cooked in Indo-Chinese style
    Chilli Chicken is a dish made of chunks of boneless chicken mixed with dry red chillies, finely chopped ginger and garlic, onions and other Indo Chinese spices to make a spicy Indian flare dish along with the distinct traditional Chinese flavors.
    Chilli Chicken Indo Chinese

    Ingredients
    1 pinch ajinamoto
    1 number bell pepper
    15 number caswnuts
    1 number celery
    500 grams Chicken
    1 tbsp chilli garlic paste
    4 number chillis
    1 tbsp corn strach
    1 number egg
    1 tbsp oil
    1 number onions sliced
    1/2 tsp pepper powder
    as per taste salt
    1 tbsp Soy Sauce
    1 number spring onions
    1/2 tsp sugar
    Directions
    • In a bowl add chicken cornflour,salt,ajinamoto,egg mix all these and add pepper powder mix again.
    • Deep fry these chicken and keep a side.
    • In another pan add little oil, red chillies dry, chopped ginger and garlic slices mix well then add caswnuts onions, bell pepper cubes, celery, spring onion, chilli powder, pepper, soya sauce, chilli garlic paste mix well then add ajinamoto, sugar, salt mix well and then add chicken stock or water bring it a boil and then add chicken mix well then add the cornflour mixed in water about 4Tps cook for few mins and the chilli chicken is ready

    I tried so many different recipes, but Sanjay's is the best! No one can beat this guy.
    My version: avoided msg/ajinamoto.

    Vah vah vahhh.... vah re vah Chef... I tried this recipie today and it was mind blowing..... U know I was running out of eggs at home, so I added maida, rice flour, corn flour, chilli powder & salt to mix with chicken... It came out really well after deep fry... I just love ur recipies ...

    Excellent dish. I make almost the same dish except without the deep fried chicken, tho deep frying is always yummy. Plus, I like to add a couple more vegetables at the end like carrots and bok choy. Love it.

    I'm sooo trying this recipe. It looks awesome! It reminds me of a Thai-Chinese dish that I have eaten. That one added battered deep fried asparagus to the stir fry. I think someone should write a cookbook about Chinese fusion cooking around the world. Oh! And Indian fusion cooking. It is so interesting to see how different food cultures adapt and meld with other food cultures.

    I tried this out yesterday!! Came out okayish..But one major improvement I would like to suggest is if you could tell us the amounts..like yesterday I ended up adding a bit too much of Soya sauce..but other wise this is one recipe which actually works...:)

    Looks delicious! I've always wanted to make chili chicken and I'll definitely give this recipe a try. However, do you have any suggestions for a substitute for the ajinomoto? I know it adds a lot of flavor but it's known to be very unhealthy.

    Thanks for posting your amazing! Im not a big fan of MSG. Can i cook it without msg and do you suggest adding anything in substitue for it?

    Chef, what variation we will have to make in recipe for use of Airfryer. I always try to avoid deep frying. Also please suggest alternative for MSG. Sometimes I use ripe tomatoes for umami taste but it will change the recipe.

    This turned out extremely well Sanjay. Thank you for explaining so clearly. I have started to make all your dishes and finally I am getting the pungency right. I always found something lacking in my food before. Who knew that it was the pungency.. I was too scared to have a heavy hand with chilies. After watching you i am more bold.

    i made it last night came out really nice and crispy.i chopped the onions a lot smaller I didn't use any msg but did used chicken broth My husband really enjoyed it! esp since i put a lot of peppers so it was really spicy! Thank YOU!

    Sanjay, my hats off to you man! Great recipe - for the first time in my life I just finished cooking it. The only ingredient I could not add was ajinomoto as I did not have it and could not find in the local grocery store. It made no difference in my opinion as the taste was fantastic! Just as we get it at the Hakka Chinese restaurants in Toronto. I just added a couple of drops of red food coloring for authenticity.     Question: This was the first time I've heard of "Corn Flour". It looks like cornstarch so I googled the difference. Cornstarch is used as a thickening agent as you use it in the end of the video and corn flour is used for many dishes like tortillas etc. Sometimes the two words get interchanged for the same item; is this actually corn flour in this dish or is it supposed to be cornstarch?

    Ijinomoto is a seasoning, it is used in almost every chinese food, or oily food..it makes the food extra nice but makes you very thirsty if too much consume. he put just it just nice...i wish i could try abit of that!!!

    In USA most chinese restaurants are not using MSG=Aginomoto...SO what would be the substitute for it?
    I love all your recipes and some day when I am in India would love to eat at your restaurant..And you are very pleasant to watch :) Thank you for sharing your talent

    I tried this-- it is the real deal!! I skipped the cashews though (not my thing).
    One question: Do you guys think this dish can be done without the deep frying of the chicken? Can't the chicken pieces just be thrown in and stir fried? I'm slightly worried about how a corn-starch + raw egg batter on the chicken will respond in a stir fry. I want to try to make this dish healthier.
