Having more boxes than players and enough bidder buying power to potentially get multiple boxes would allow for everyone to remain engaged in the game and not be as cautious early on. Also, the idea of the the general contents of the last box being unknown and automatically won by the second highest bidder encourages folks to not bid so they can try and be awarded that box; allow players to see all of the boxes and don't have any boxes automatically awarded to players. The starting buying power of each player should be equal but low enough that the value of the boxes (for the most part) exceeds the starting buying power so players feel confident that bidding and winning boxes will win them the game versus saving their initial buying power to avoid a loss.
I think this bidding hesitation could be easily solved by having 10 boxes, and you are all fighting over them. This way you aren't just stuck with the first box and the gap can accumulate with additional boxes won.

I love this game! I would suggest changing the rules so that the person with the bet closest to the actual price wins. That way players are encouraged to keep bidding no matter what the items are. I would also love a mystery box challenge with just the mythical kitchen crew where all the mystery boxes are food or kitchen themed!
