    AS a professional baker, I would say you knocked this one out the park. You explained the taste and texture in such great detail it made my mouth water and actually smell the bread. Baking bread every day is something I've done for a long time. NOTHING, comes close to the smell of baked bread when it is just about ready. My thought on bread is this. If you start smelling it, the bread is not far from being ready to take out. MMMMmm MMMMmmm. Great job! My sister in the Lord. as always.

      @Jeremy Gautreau.....YOU know what ur talking about.
      You have a "cook's nose"....
      I can smell everything I'm preparing....I know the butter in the pan has melted
      By the smell....I know the oil is warm enough to start adding items to the pan...
      I know when the pie is almost ready to come out of the oven, WHEN the bread is nearly finished🤭.
      It seems strange to some,
      But I think that food is one of my love languages....and
      I always want the food to LOOK inviting, smell intoxicating, and taste indescribably good. 🖐🏻☺️

    Hi sweet lady, I use the wheat bran in my meat loaf instead of bread crumbs or cracker crumbs. So good!

    An old 4-H and Home Ec tip for facilitating the rising:. Boil water and fill up a shallow vessel. Put on the lowest possible rack level in your oven. Place the covered bowl of dough on the rack above. (The steam from the hot water warms the oven perfectly.)

    Thank you. Very long story in short form: I grew up eating, growing, and making my own traditional foods but disabilities the last 20+ years have been hindering continuing. I've been looking for easier ways to still have as much traditional as possible. Your teaching easy ways to transition to traditional has been helping me keep as much "traditional" as I'm physically able! Thank you.

      Oh my goodness! Thank you so much for the kind words. I really try to focus on the beginner because I think this is a much needed "niche" on YT (as opposed to fast videos where the instructor assumes previous knowledge and moves along quite quickly...) but I also hope that I share some useful nuggets for more experienced home cooks/bakers as well. It's my goal to provide free "Master Classes" for those who can't afford the pricey online classes because it is SO important to me to teach these skills and preserve them for future generations.     Oh Mary! I've been searching for a hamburger bun recipe that delivers for YEARS! We have been gluten free for a decade, but thanks to good nutrition, sourdough and organic Einkorn flour we've been adding wheat back into our lives. I'm so excited to take this video in and enjoy making and eating these with my family! Thank you a hundred times!

      Me also, healed my gut with good food and found a company that has ancient wheat types that are Non-GMO, and the like. "Sunrise flour". These folks are out of Minn.

    I loved this Mary. I tried hamburger buns for the 1st time last year and they were so heavy. The crumb on these looks so much lighter. I got the Mockmill last year and I am so glad that I did. Thank you for your patient, loving approach.

    Thank you so much for explaining all of this. I have been intimidated about wheat germ and all that pertains to whole berries. I now feel confident that I can do it. The hamburger buns look delicious. I'm going to make them the next time my grandbabies stay the night. They love working with me in the kitchen.

    Mine are a minute away from testing to see if they're done!! So excited. My mom is an excellent baker, but never had the patience to teach. I love how you go through everything so slowly. That really helps!! My daughter said to call her when they're done! Fingers crossed! as my dough was a little on the dry side before the first rise. Thank you Mary!

    After 2 learning attempts (not using setting #5 for grinding, and not using a fine enough sifter), my third batch turned out great. They were a little flat because I rushed it since I was running behind in time, but otherwise perfect! They are somehow both strong and soft. So delicious! So worth it. Thank you, Mary, for being so thorough in your descriptions. This video covered so many mistakes that I've been making in my journey with bread. I have restored hope that I can make fresh ground flour work. Thank you!

    I SO needed this!! I have been so frustrated making bread. This is an answer to my prayers. I do have a Mock Mill. I also have a sourdough starter. I have a KA stand mixer. My goal is to be able to make whole grain bread with sourdough. There really isn't that much out there on how to do whole wheat with sourdough-- for the beginner. I'm not that good at kneading or judging when I've added enough flour. You are such a blessing!

    Mary, I purchased a Mock Mill based on your recommendation and have not used it yet. I purchased wheat berries thru Azure Standard, so there wasn't any reason for my hesitation, but I was scared. This video is an absolutely perfect tutorial to help me get started ❤️ I am so glad that it looks like you are feeling better. Thank you for sharing your knowledge and skills with us.     Wow! My buns came out delicious!
    Thank you, Mary!! I use these with Paula Deen’s tilapia recipe. I added greens, tomatoes, delicious olive oil & balsamic glaze. It was so yummy. The bread held beautifully, sturdy enough for all the juices and yet so soft!

    MARY!! I tried some hamburger buns last year from a different recipe and they were terrible. I didn't know a homage bread cold me made so dry 😲 I watched your tutorial and they really looked delicious and soft so I took the plunge and made a triple batch! It was mine and my mother's birthday so I needed a bunch. I was forming them as my hubby came home 🏡 he was super excited!! I have big baking sheets so 2 sheet were needed . 😅 As I took out the first one...right away they looked like yours!! So i put one bun in the fridge to cool quickly. As I cut into it i could already tell THIS IS GOING TO BE GOOD!😩 I shared it with my hubby and mom and well I have been told they are the PERFECT hamburger bun 🥰 Thank you soo much!!

    Good show, dear Mary. I gave my kitchen aid to my dau.-in-law because it was too heavy for me…..and she loves it. But I’m going to try making these d-e-l-i-c-i-o-u-s hamburger bums on my own.     Love the Mock mill, I don't sift anything out, unless I want a real fine bread. I mix in beans ,lentils, different grains for Ezekiel bread.

    The more recent models of the KitchenAid mixers now have a plastic gear in them that wears out with a lot of bread making - speaking from experience. For a lot of bread making, may want to look at an Ankarsrum instead of a stand mixer - I switched for my bread making and LOVE IT!

    Thank you so much for this video. I learned so much about flour and the processing of it. I wondered if I could grind my own flour and here you are doing it. That was the highlight for me. Even better knowing I can get an attachment for my Kitchen Aid. And learning where bran and germ cone from. Lord! Didn't realize how dumbed down my homemaking knowledge was.     Thank you very much for sharing this recipe! I never really like store bought hamburger buns, mainly because most times I must freeze the buns for a time before needing them. I love the idea of making them as needed FRESH. My husband and I have been thinking for a very long time about purchasing a grain mill. They are an investment and we want to get the best one we can afford. I will be checking out the Mockmill for sure! Thank you as always for your sweet nature and kindness in the kitchen!     Glad you point out the difference in moisture in flour depending on your area it’s a bigger deal than most think I live in Alabama and I have to add at least 1/2 cup extra sometimes more to every recipe I make ‼️ it’s terrible

    Hi Mary, so happy you are going to do more baking videos this year. This looks relatively simple and definitely worth a try. About the left over egg wash I would convert it into an omelette, ready to enjoy when the buns are out. 😂 that’s just me. Thank you Mary.

    Love this! I watched this mainly for the milling and sifting portions of the video. I purchased my Mockmill a month ago using your discount code -- THANK YOU! I also purchased the 40 and 50 sifters from Breadtopia and tried sifting some of the fresh milled flour for some pizza dough. It was a learning experience for sure! After watching this video, though, I now understand what made it more challenging for me - I milled it too fine before sifting it. Next time, I will mill it coarser. The pizza was delicious, anyway. Can't beat fresh milled flour! I am hooked!

    AS a brand new baker, I was very confused as I did not understand how the kneading goes since I don't have a stand mixer. Hopefully a different video will make it less confusing for us brand new newbbies.     I did the sauerKraut and it came out wonderful. I cannot stop eating it and another batch will be started soon. Never knew it was that easy to make. I'll never buy sauerkraut from the store again.

    Dear Sweet Mary, I am new to your channel (wish I'd found you sooner!) and enjoyed your video today. You have such a wonderful, sweet voice and explain step by step so patiently. If I want to keep it whole grain, I would follow the same recipe? I have been wanting to "mill" my own flour and have a Vitamix which I will try soon. The only flour I buy is organic whole grain Spelt and Whole Wheat for baking and pizza dough. Thank you again for such a wonderful video!

      Hi Elisa, Great question. In the recipe over on my website (link in description), I explain the modifications you may need to make if you make them whole grain. Generally, when using modern wheats, you made need a 1/4 cup or more of water. However, when using ancient grains, especially Einkorn, you may need less water.     I love to back but am gluten intolerant so I use more of the ancient grains such as einkorn. I would love to see more baking using this flour

    Thanks for showing the Mockmill in your earlier videos. I got one ( as you may know) and I absolutely love it. I spread the love and got a friend so interested in the whole foods journey that she was given a Mockmill 100 at Christmas. These hamburger buns look great, Mary!     Have to say these were good. I have been making brioche buns for a while but if you need a firmer bun these are very good. The only problem is wanting to eat them when they come out of the oven!

      @@MarysNest I wonder if I shape it as hotdog buns would the cook time remain the same? Now I might ask for a mixer for Valentine's. Would this fit in a 3qt mixer or do I need a 5qt? My kitchen is tiny so I try to avoid big appliances.
