    Why do you leave that one slice in the middle to cut off last? Is it to make it easier to cut off the second block?

      Yes. Most fishes should be cut perpendicular to their lines.

      That's how you cut salmon for sushi. Sashimi is the opposite direction.

      I use just regular one. You don’t need to buy expensive one. Your skill is more important.:))

    Great video! But if I do it myself at home, do I need to do soak the raw salmon into something to kinda sterilize I won’t get food poisoning? Also when buying salmon, any market is fine?

      You can get sashimi quality salmon at Asian market. Don’t eat low quality raw fish. Dangerous

      @Jess Baron - you can buy parasite-free salmon from Costco. Only buy the farm-raised salmon because they are raised with parasite-free fish pellets. The United States FDA says that you can eat raw farm-raised salmon without having to freeze it at -35 degrees C for 24 hours or at -4 degrees C for 7 days. I've used farm-raised salmon for sushi many times and I have never gotten sick. Stay away from the WILD-CAUGHT because your chances of parasite contamination are very high!

      @@jessbaron6184 - Costco also sells pre-made shrimp tempura in the frozen food section. You can make shrimp tempura rolls with slices of raw salmon on top...YUM! If your friends give you shit about eating farm-raised salmon raw because of parasite danger, here is the link to the FDA Food Code journal.     Bench scrape the excess meat and fat from the salmon skin, cut into bite size pieces, dehydrate until skin is rock hard, deep fry. *TADA!* You got yourself salmon chips.
