I tend more toward South Indian versions (palak pappu, sticking with toor and moong, especially moong).The difference is not that huge, probably mostly ixnay on the karuri methi and in with kari patta). some will add sambar powder to palak pappu, as well. I will try this one, though.

The hing is for the gas. The dhal will not be as tasty without the tomatoes. If u want to you can use 1 or 2 types of dhal.
