Great video. Could you guys do one about handling milk? Why and how are you splitting the milk between the pitchers? Why do you split so frequently? Instead of whirling to keep the milk from settling? Are you cooling your pitchers?
He's talked about it before. What he is doing is mixing different temperatues/batches. One is older and therefore settled, another is freshly steamed, so mixing the two preserves microfoam and steamed milk allowing him to make many lattes without making milk to-order.

Only very important advise: Make sure to buy it from a local distributor (not online!) who offers after sale service and you can get back to with problems and questions.

Now tell your fiancée to start filming, we need more barista live events man! By the way, that Slayer machine is unbelievable, such a beast.
Level and consistent tamping are more important. Based on the nice mouse tails and crema extracting out the portafilter, his tamping pressure was adequate.
It's all too easy... I order a flat white with semi-skimmed milk, one lactose-free cappuccino, a cappuccino with oat milk, two decaf espressi macchiato and one cappuccino with full fat milk. :-) just kidding

Is it just me or you barely apply any pressure when tamping? looks like barely 5kg pressure
I noticed too. It seems like a gentle press, not even 5kg...
Level and consistent tamping are more important. Based on the nice mouse tails and crema extracting out the portafilter, his tamping pressure was adequate.
