I think, strictly from a filmmaking perspective, they made the right choice by getting the characters to the Inn of the Prancing Pony as quickly as possible. It is the next story beat, as most of these first few chapters of Frodo's journey are either just scenes of characters talking to each other, or scenes that are inconsequential to understanding the story. I'm not saying that the book scenes are not cool or that Tolkien should not have written those scenes. Books and moviws are different mediums, and what works for one doesn't necessarily work for the other.
