  • YES! Today I am searing a HUGE MONSTER steak with a HEAT Gun! This is a 4lbs T-Bone Steak, looks so massive the most will cal Porter House Steak, but in all honesty it is t-bone steak. Since I am putting the heat gun to the test, this massive steak was a perfect subject to try.

      Sous Vide Everything do a episode on the zabuton steak. I have heard it is better than picanha. I think it’s also called Coulette or Denver steak

      Guga, can you do a video (or point me to one) on proper use of the Searzall (tips, tricks, etc). I'm getting much better with it but I'm still finding searing on a very hot grill producing better consistent results so I was hopping you might have some tips. My best luck with a searzall was a prime rib roast (no doubt all the fat helped).
      Also can you recommend bags for the foodsaver that won't leave grids on my steak. Their bags are great and I've used them for years but with sous vide I'm growing tired of the grid pattern it uses. Are the bags you use in the chamber vac compatible with Food Saver?

    Hey, I've done this a couple of times, and always comes out wonderful. I think it's my favorite method to sear steaks so far, specially when making steaks indoors. WAY LESS mess than searing in a cast iron skillet; plus no smoke, which was the main problem of searing in the skillet.

    Hello Guga,
    I love your videos... I'm some what new to Sous Vide, but really enjoying. Would you consider doing a steak test where the process is:
    Marinade: Salt & pepper
    Cold Smoke: Use smoke gun to cold smoke and vary times
    Sous Vide: Cook all meat the same
    Finish with smoke gun: Use smoke gun to cold smoke and vary times
    Finish with heat gun
    My reason behind request is that I live in a condo, and no outdoor grilling. Thank you and keep up the great videos.

    Will you do a searzall sear at real time? I feel like it takes forever for me to sear my steaks. I pat my steaks dry too.

      Its true, it takes a very long time. I dont think anyone will want to see that. It will be a boring video. But you are correct it takes time its not seconds.

      Invest in a propane flame thrower. It works so much quicker and puts such a good crust on.

      Perhaps a shorter video guide of how to best use the Searzall since I believe you have more experience than most. Even MauMau burned a little with it ;-)
      Searching UA-cam and the internet yields no info on how best to use the Searzall when it comes to achieving a good sear without burning (i.e. how to know when you are done searing).

      Sous Vide Everything yes I would like to see a how to on both the searzall and flamethrower. A tutorial video if you will. Like how long to hold the flamethrower on the meat, how far off the meat to hold it and how much flame to use.

    I use the Mag-Torch MT245C. Is about $17 from Menards then another 3 dollars for the propane cylinder. Decent starter torch for about $20. You get a decent size flame better then the Butane torches anyway.

    Time to sear and heat setting? My experience, albeit with a different (simpler, less expensive gun from Harbor Freight) was took too long to get a deep sear. Visually, i like a deeper, darker sear. Nothing beats the flame thrower!

    I can't wait to try my heat gun! I never would have thought of it but the heat gun goes up to 700 degrees F, which is plenty hot enough. My brother-in-law borrowed my heat gun but I'm getting that back from him!

    So I have watched probably 50 videos in the last week. I thought I have to try this funny enough I did it in a pot of water on the stove which was hard to regulate but I wanted to see if it's good before buying a machine. Amazing. I love how it's basically impossible to mess up. I can grill a nice steak I dont think I have ever made a nice looking one. Seared on a Weber kettle and perfection. Thanks for your channel I am hooked!

    Heat gun, super smart. Better for indoor use (though either could burn down the house) Looks like you need to hold it quite a bit closer than a torch or searzall? Cool idea. Heatguns come in different amperages/tips, correct. good way to trip some circuit breakers.

    I got this rig called a "Looftlighter" for starting lump charcoal. It's electric with a high speed fan convecting over a high heat heating element screen. This vid makes me want to try and sear with it, lol...

    Just make sure that if your heat gun hasn't been used in a while, give it a minute to get rid of the dust and cobwebs ;-)

    The heat gun is a great idea. Just FYI you can get one at Harbor Freight for around $10 using a coupon, which is much cheaper than the one Guga uses. High setting is only 1112 degrees, but just hold it there for a couple more seconds.

    Guga, can you please tell me if your heat gun is really getting to 600 degrees Celsius? I have now tried 2 different one and they all only get to 250 at the nozzle. Thank you for your help.

    yes! do the head to head! also test the searing at different temperatures, since it is adjustable on the heat gun. Unless yall cranked up the heat gun to max to get it to equal out with the searzall.

      brandobond searzall or heat gun if only one. You might find yourself in a situation where using a flamethrower isn't a good idea lol

    the heat gun is cheap compared to a searzall and it works just as good so if you're on a budget buy a heat gun.

    Hi Guga. You guys do a great job on your channel! I've learned a bunch of new ideas! Hey, I wanted to ask you about searing. When searing, I ALWAYS use a skillet because I want a maillard reaction to happen for both visual appeal as well as taste. They are many, many compounds that are created when the maillard reaction happens to protein! When using the searzall or any other torch, it's too hot for a maillard reaction but provides pyrolysis. All those delicious compounds are not created by pyrolysis. Here's a quote from Nathan Myhrvold from Modernist Cuisine on the matter: "You might think that raising the temperature even higher would enhance the Maillard reaction. It does up to a point, but above 180 °C / 355 °F a different set of reactions occur: pyrolysis, also known as burning. People typically like foods a little charred, but with too much pyrolysis comes bitterness. The black compounds that pyrolysis creates also may be carcinogenic, so go easy on charring your foods for visual appeal."
    So, here's the question: Can you do a test similar to the searzall vs cast iron skillet, but perhaps lower the temperature a bit (below 355F) and add some grapeseed or similar oil. This will surely take longer than the searzall, but I think would taste much better and without the risk of that butane/torch taste that we hate. Thanks!

    that was a great idea...i was very apprehensive about getting a searzall because 1) it's expensive 2) have to buy and store propane cans. 3)oil sputter makes the searzall really gross over time. i'm going to buy a heat gun now

    Btw which fan setting do you use for searing ?, i know its on max temp but do you use lowest fan setting or highest ?

    AC/DC always adds a nice touch! Is that because you have to plug in the heat gun? Or maybe because the heat gun is "hot as hell?" (Heh. yeah, I know it's not. But they were def trying to copy that sound! ;-) )
