Bengalis are the one who not only knows how to cook drumstick & moringa leaves curry, but we also cook amazing moringa flower curry using poppy paste. We are the only one who knows to make "pakora" out of pumkin flower. We make curry of pumkin leaves, bottle guard leaves & stems ( kumro danta, lau saag, lau danta, as we call in bengali). We not only make "dal badi", bt also make "ashgaurd badi"( chal kumro bodi in bengali), we are master in veg dishes as well. We are the only one who make raw papaya chatni ( plastic chutney), also v make amazing raw papaya curry.

    Couple of reflections :
1.) Bengalis even eat the delicious inner part of the banaa tree stem called "thor". One of the most overlooked ood rich in iron and vitamins.
2.) Luchi & kosha mangsho is one combination while motorshutir kochuri & cholar dal is the other. Kochuri & mangsho is not am ideal combo. But luchi is universal combination with most bengali non veg dishes except fish.

Nolen Gur is made from Fresh Date palm Juice, its boiled and made into Nolen Gur, it's only available during Winter Season in West Bengal.
Also its Bhetki Fish Fry with Fillets of Kolkata Bhetki Fish, Macher chop is a different snack all together where the Fish is mashed with potatoes and sauteed with Masalas and made in to a filling which goes inside a egg breadcrumb coating and deep fried. It contains garam masala and raisin also.

Bengalis use Aloo in most of the dishes is because since Bengal region faced so many famines over the years people have learned to incorporate aloo in maximum of the dishes to fill up their appetite. This is also the reason why banana flower dishes are found. If you go further east in bengal to the North East of India you would find so many bengali dishes that you have not even heard about such as stem from banana plant used in curry, Taro roots and stem (Kochur Loti), dry fish, fermented fish with bhoot jhulakiya and many more fishes not found in the western region. One could also find a wide variety of cuisine in Bangladesh where the best quality of Ilish Fish (Hilsa Fish) is found from the river Padma.

Geographically Bengal region (that includes modern day West Bengal and Bangladesh) spans from tropical to temperate zones and has more than 90 per cent of most fertile plains. Apart form deserts, all major landforms are present here. This helps the region grow vast numbers of crops, vegetables, fruits and other ingredients.
Where you have so many options of ingredients in to cook, you definitely expect so many varieties of food. Thats the reason why Bengali cuisine has so many vegetarian dishes apart from fish, meat, prawns, crabs. Even if you are a pure vegetarian, you'll not be disappointed while you visit Bengal. Thats the reason why Bengalees are mostly foodies.

Being a Bengali & a foodie i really liked the video .... but there are somethings which need to be rectified and i would request you to try those after that.
Nolen Gur is not made from 'Ganne ka Juice' / Sugercane Juice. Its made from Date tree. A cut is made at the top portion, just below the leaves of date tree and a pot is tied in the tree to collect the sap. Then it is heated to make Nalen Gur. You can get the best nalen gur in winter.
This is not Fish Chop. Sorry for correcting you so much . This is Fish Fry. The difference between Fish Fry & Fish chop is, in fish fry a fish fillet is used and spices are mixed and layered on both side then it is dipped and fried, whereas in fish chop, the fish is directly mixed with spices and boiled potato and then cooked like a dry food preparation and then dipped and fried.
You two really pronounced the most of the foods nearly perfectly. Are you really not Bengali?
Try some Posto Bata (smashed Posto with Mustard Oil & Green Chili) & Posto Bora (fried Posto Fritter Ball- normally made with Posto Bata). These 2 are god level of Posto.
Luchi & Puri are completely 2 different things. These Luchis & Kachuris looks like a sad version of the original one. It should not be flat, it should be round (more like sphere because of swollen/puffed) and fluffy. You should have also tried 'Radhaballavi'
    We love Alu..... :)
You know @Antil, what is better than 1 Rasagolla, it is 2 Rasagollas... :) I loved the part when you said, 'atma nikal diya yaar uski'. I also hate it.
You have missed lots of foods. Come to Kolkata. City of joy to really feel the happiness.

  • @ArpitaMukherjee-lw2cu
    @ArpitaMukherjee-lw2cu 2 місяці тому

Shukto and Posto should have been eaten with plain rice, either basmati or gobindobhog (variety). It enhances the flavours of the side dishes. Pulao goes best with either Chhanar Dalna (made from cottage cheese ), Fish Kalia, Chicken Kasha or Mutton delicacies, or even Aloo Dam . Mochar ghanto is again another dish made out of banana flowers and it can be cooked both as veg or non-veg items. In the veg form we make it with daaler bora and in the non-veg form we use shrimps.

You will be amazed to know that authentic Bengali cuisine has more veg dishes than non veg. Most of the non-veg dishes will have atleast one veggie in it, be it aloo, gobhi, parwal, or matar.
