I have the Ohlins sitting ready for install with swift springs higher rate but since you will be driving first and lowering more can you see how much of an issue the rear stroke is when you drop it. So many people are having to mess with pre load in the rear from preventing riding on bump stops. This effects cars lowered typically 1.5 to 2 inches. Its one of those internet talks but keep an eye on it.
savagegeese I believe the suggested setting from Ohlins lowers the car by an inch. I have mine on factory settings. I've read and heard of people having issue with riding the bumpstop in the rear. Maybe I'm not noticing it, but I haven't had any issue with the suggested 1-2mm of preload.

For the wheel choice, Volk TE37SL wheels in the gunmetal color with polished lip would suit this car perfectly IMO. Just my preference. I'd put those wheels on anything honestly haha. One of my favorite wheel styles ever.

By the way, the little rubber/plastic pieces you removed, I believe, are to direct air away from the tire to have less vibration / feedback while driving at higher speeds.I don't think it'll matter though since your car will be much lower :)

Would/Could you run E85 in this car? Could put out quite a bit more power by utilizing a flex fuel sensor. You've already upgraded the fuel pump, all you'd need is a ECU that's capable of tuning for E85 with a flex fuel sensor.

Great choice of parts all around! Just get rid of those half shaft spacers before they end up doing damage to your axles or your diff. If you look at most road race S2000's, 90% dont run them since they cause more problems than they are supposed to fix. Keep up the good work

roll-center adjusters will bring back the factory suspension geometry on a lowered car as well
