    In Berlin we use onions, pickled cucumbers, parsley for potato salad and we let it sit over night with „vinegar“ from the glas of cucumbers. I used to use a light mayonnaise with mustard, Pepper, Salt and Joghurt to make it lighter. People also use vinegar and oil with herbs. Some use grilled bacon. My aunt used to lay sliced hardboiled eggs all on top of the salad. I‘m sure your salad is swell. You could use bell peppers or tomatoes. It fits so well with vegan burgers. What do you think of this idea: If you have chickpea water and mix it with lemon juice and mustard you get a nice base for salad sauce. To make it creamier use a little psyllium husk.

    One of the thing I’ve learned since going vegan 8 years ago is that I never scoff at ingredients. I am always so pleasantly surprised how delicious some of the most unusual ingredients can create. Can’t wait to try this. 😊❤️

      I’m recovering from unexpected death of my husband right prior to Corona. Thought things would be sorted out & I’d be ok by now. Nope. I wrote to Jane that watching them is giving me a new lease on life. Been pretty bummed but they are wonderful!🙏🌿😂🌿😊

    Applesauce can be frozen...I make a large amount and freeze portions... great on pancakes for brekky!!!

    I'm not making this up nor kidding. I love, love, love potato salad and just this morning was thinking, how do I find a good vegan recipe without oil? Thank you for this! I think I would add some pickle juice and finely chopped pickles too! Turmeric for color. Anyway, thanks again!

      I used their ingredients and didn't use pickle juice. It truly was really good as is! I kept tasting it and saying, this is so strange but unbelievably good. Like my tastebuds couldn't believe it. lol What I like also is it "holds" it together like mayo, not some strange drippy texture. Mind you, I live in Germany now, where you can get potato salad with more than 6 types of dressing - vegan by using oil, vinegar & dill is common. There are amazing different types of mustard here too. But I used a standard German table mustard (not like French's but not Dijon either). But I wanted to avoid the fat and it taste good.

    I’d blend tofu or cooked cauliflower into a cream and add it as well. So it’s creamy.😀 Maybe a little chopped pickle.

    Love it! Delicious. It helps to see you make the dish. I would not have tried it. I have RA and am on the plant based diet. I struggle with it. I love potato salad and this fits the bill. Thanks for sharing. Your humor is so helpful as I am fighting an infection.

    This sounded so good, I didn’t have the celery so added a smidge of ground celery seeds. I didn’t have the purple potatoes so I had some sweet potatoes, crooked neck squash & the red potatoes of course. I added some cilantro, parsley and red onions. I also chopped up a handful of Kalamata pitted olives. It was delish. The apple sauce & Dejon mustard was such a tasty combo. Thanks

      Thank you! I can’t eat mustard(or vinegar or soy or radishes or onions…), so navigating is a bit of a minefield! But tahini, lemon juice, garlic I can do! Trying to break my mayonnaise addiction! Really appreciate this! Thank you 🌷

    Applesauce freezes well! I buy the big jars and after I use what I need for a recipe, I portion out in one cup increments and freeze. (you could even put into a silicone ice cube tray if you wanted smaller portions, like per TBS) This recipe looks wonderful! I think the sweetness of the applesauce and the bite of the mustard would be a great pair! Watching your videos has helped me discover so many more of the recipes in your books! Thank you!

    Don't ever change the way you do videos! I love how genuine, funny and sometimes clumsy you guys are together. Reminds me of when me and my mom used to be in the kitchen together. I tell people I'm WFPB during the week and vegan on the weekend. I don't have any major health issues, so I find balance and comfort in eating some processed vegan fun foods (on the weekend).
    After downloading Dr. Greger's "Daily Dozen" app, I noticed that after eating some of those processed vegan foods, I couldn't really update my food intake, because there was no real "food" being eaten. So every day I move more towards total WFPB! Thanks ladies.

    Please try to come to small festivals that include a more culturally diverse set of people. People in poor neighborhoods need to hear this message too! I know we would love to have you guys at Vegan Soulfest with Dr. Milton Mills in Baltimore, MD.

    I made this recipe just as written and it was delicious!! I happened to have some red grapes so I added a cup of those sliced. Also about 1/4 C of matchstick carrots for color. So good. Also today was the first time I cooked 3 lbs of yellow potatoes in my Instant Pot. They came out perfect for potato salad! I highly recommend this recipe! Thank you Jane & Ann for these lovely videos! 💖

    This recipe is beautiful with red onions, which are so good for you. And, I've started replacing celery in my potato salads with frozen hulled soy beans for the color but more nutrients. My toddler loves potatoes and soy beans!

    Wonderful recipe! Not long after my husband and I became plant-based we were both wanting some potato salad, so I went to the grocery store and I bought vegan mayonnaise we were so impressed with the taste of it that we thoroughly enjoyed that big bowl of potato salad. Then we became more educated. And found out that vegan mayonnaise is really not much different healthwise then regular mayonnaise. Needless to say I have not made that mistake anymore.

      I agree. I don't buy anything pre-made, no matter how "vegan" it is. In the end, it's just more processed junk with oil, and/or preservatives.

    Hey there, you can use your applesauce as a binder for plant based granola bars. My husband loves these. Oats, hemp hearts, ground flax, cinnamon, cardamon, pumpkin seeds, sunflower seeds, raisins, apple sauce. Mix together press into a baking dish. viola

    When you open a jar of applesauce, just freeze the remainder in ice cube trays and put in ziplock bags, then you will have it when needed. Thanks for this recipe, I was wondering how to make potato salad!

    Who would have thought to use applesauce? OMG! Gotta' try it soon! My daughter loves Vegenaise, but it's not compliant for me. Trying this soon. A long time ago I made some bread machine bread with dill in it. Loved it. That might be good with this! Or maybe too much dill. But, thanks, you two precious people!

    Maybe silk tofu could work as the replacement of Mayo. Or maybe firm. It will add the white colour that mayo gives off. You already have the mustard.

    This is basically a German salad. So smart to replace sugar with applesauce. I added some celery seed to mine for more visual candy. My potatoes were baked so gave the dish that baked potato flavor. Think I will julienne a few baby carrots 🥕 when I serve it tonight.

    Looks delicious 💞! But I Cant Imagine using Apple sauce in Potato Salad???I Will maybe try it... I use hummus i make it a little thinner with water and I add red onion & chives! Its delicious! ( I make it with cooked warm potatoes but cold potatoes is ok 2 )

      Wow that's a great idea using hummus I wouldn't mind trying that!! I bet that's delicious. And I'm thinking maybe the applesauce gives the mustard more of a honey mustard vibe? Ya know.. Tangy and sweet? 🤔 Anyways, I heard warm potatoes absorbs flavor better than cold 🥔

      The mustard and potato kind of overpowers the apple sauce and it only lends a very slight bit of sweetness to the overall dish while cutting the mustard tang. It doesn't end up tasting like applesauce all that much.

    If you are down with eating a little tofu, (I know, high fat), you could use some of the firm kind with a bit of black salt to add the 'eggy' aspect.

    SOOO good! For the "mayo" I used 2oz unsweetened applesauce made in the Vitamix + 3 packets of dijon mustard + onion powder; those were the only ingredients I had on hand. It was still awesome, and close enough to real potato salad to fit that niche. Try it!!!!

    to give it a Peruvian twist. Let the onions and some lemon juice sit for a while with cilantro and it is awesome some cooked green peas would also give it a nice color.
    Also if you use your recipe add some dill pickles and it gives it some zing.

    sounds gross but really very good! This helped me kick my mayo addiction! Also works very well for macaroni salad. I do cut the mustard with a few drops of sweet pickle juice.

    Freeze leftover applesauce in smaller freezer bags in measurements you would use, lay flat, press out the air, then freeze! Laying flat also means they thaw quickly sitting on the counter or under hot water for a few minutes. I do this with many things.

    I've never seen where either Jane or Ann replied to a comment directly (yes, there was a single Q and A video from 3 months ago), so it's probably pointless to ask, but I'd like to see a video that shows your average "what I eat in a day" of plant based meals. As it is, there really doesn't seem to be much variety: oats for breakfast, salad/sandwich for lunch, and rice and beans/burritos for dinner.

    The applesauce thing isn't weird, if you know that it's used as an oil replacer in baked goods...besides that Applesauce/Mustard/Maple Syrup is a very tasty glaze for baked winter squash.....I like the potato salad recipe!

    It looked like Ann was cutting up raw potatoes. Were they soft enough? I use 2 T hummus chopped pickle, celery, chopped apple, red pepper a few black olives finely chopped on top.

    Yummy! Try it with radishes or chopped petite mix sweet peppers for color.😊
