My mother and father in law used to live off Settawig Road in Brasstown. Used to bring our kids for a visit every summer. Beautiful small town. Father in law used to be the ER physician at Murphy Medical. I miss that sweet town.

This is a wonderful video and thank you! That salad looks amazing!
I like to make a simple Italian peasant stew called Ribollita. You start by sauteing a chopped onion, carrot, celery, and garlic. Add the sauteed vegetables to chicken broth or stock. Toss in some canned peeled tomatoes, roughly chopped with a small wedge of parmesan cheese. Add a can of strained cannellini beans, chopped kale, salt & pepper to taste. I also sprinkle some red pepper flakes. At the end...toss in some torn day-old crusty bread, a little shredded parm and a drizzle of olive oil over top. It's so comforting, especially on a cold day.
I love your vinaigrette. It's a real classic. Here's a few of our favorite vinaigrettes. I always follow the 3 to 1 ratio. 3 part oil to 1 part acid.
    1. evoo + balsamic + roasted garlic (this one goes with anything really)
    2. evoo + lemon juice + dijon + minced shallot (I love this one with chopped kale, dried cranberry, shredded carrot, and fine sliced apple)
    3. walnut oil + champagne vinegar + fresh thyme (I put this on butter lettuce with some blue cheese and toasted walnuts)
    4. avocado oil + lime juice + cilantro (amazing over grilled or pan seared fish)
    5. sesame oil + rice vinegar + orange juice (I like this one with fennel salad. Fine slice fennel, orange segments, dried cranberry and fennel fronds) Delish!
Enjoy! Blessings and continues prayer for Ms Cindy and all y'all.
Sending light & love from Ohio
    My best, Lisa

I am from Arkansas, and mom made wilted lettuce frying it in bacon grease - adding chopped bacon strips, 1/4
cup vinegar, maybe S&P. That ladden vapor smell will make you hunger. I think I will use kale. What you think?

I eat the unseasoned ones and season them myself. My fav is to put 2 cans of collards and a smoked turkey wing or drum, chopped onion, salt, pepper, and Tony's seasoning bring to a boil then simmer for a couple hours until the turkey falls apart. It's divine!

My mental mouth is watering. I think that's because I am full so I can only salivate mentally 😆 I never knew how satisfying it was to watch someone make a salad! Lemon, parm, tender kale, etc. Mmm. If the kale wasn't all that tender, one could saute it for a very short bit as well.

I buy kale rather often. One of the grocery stores where I shop here in Wyoming had a sweet lady always working the checkouts and I often went through her line. One day while she was ringing up my kale, she said to me "boy, you really like to garnish things"! I had to explain to her that I ate it. She had never seen it other than on a plate with a piece of orange on it as a garnish at Village Inn or IHOP or something. Cracked me up. I think I’m going to have to take his salad for a spin. Looks great!

I've always loved kale. My Maw Maw Madeline used to cook it with ham hocks in a pressure cooker. They were so tender and good. Oh my gosh, I'm sending a card to Corie and Austin and I wrote a long note to them in cursive! I'm 67 and learned cursive in grade school and it's just what I'm used to. I forget that cursive is almost obsolete now.

I will definitely be making this salad! Looks yummy. I love watching y’all in the kitchen, family time. One time when my husband and I had dinner in Phoenix AZ, I ordered a kale salad that was the best I ever had. I asked if I may speak with the chef and he actually came out and told me his secret was to blanch the kale for one minute, then cool it. I don’t remember if he then sautéed it or if it was a salad but it was so good. Thank you ladies 💕

I never had kale as a kid either. Homemade kale chips are the bomb! Cut your kale whatever size you like, toss in olive oil to coat, the add spices and toss again. I usually use garlic powder, onion powder, and salt. Spread them on a cookie sheet and back at 350. Bake till they're as crisp as you want. I usually make 2 cookie sheets worth for just myself. YUM!!!!!!! I love kale salad too. Thanks for sharing 🤗

Oh my goodness, I love this video. The unscripted parts are my favorite thing. How sweet the conversations with your girls are. They are amazing young women with such level headedness. The conversation about cursive was so intriguing. Not many young people would think twice about that. I've often wondered if a young person came across a chest of love letters sent from their great grandparents during the war and they couldn't read them, even if they wanted to. It's almost like a lost language.
My prayers for Miss Cindy and your family. It is such a hard thing to go through, you people exude the Appalachian spirit. We take care of our own.

My nanny grew kale every year and she cooked it the same way she cooked turnip greens or mustard greens, on the stove with a ham bone. Never my favorites.
My mother served it and spinach raw, in a salad with chopped hard boiled eggs.
She’d make her own dressing with bacon grease, a little vinegar and some spices or salt and pepper. She’d serve it warm and pour over the salad and it’s delicious!

That salad looks delicious. Do you know that I have never tried kale in my whole life. I need to buy a bunch of it & see what it tastes like. It would be a good variety from just iceberg lettuce in a salad. Prayers for you & your family & especially for Miss Cindy. Hugs to you all!
