An easy way to deal with tomatoes for sauce is to cut them in half and remove the seeds with your thumb. Lay the tomatoes on a baking sheet and roast them. After they are roasted, and when they are cool enough to handle, slip the skins off, then either jar them up as they are, or make your sauce. I just jar them up as they are then turn them into whatever I want when I have the time. Don’t forget the lemon. Use bottled lemon because the level of acidity is more consistent. Some people don’t mind seeds and skins but I find they taste better without them. The seeds give it a bitter edge and it is a smoother sauce without the skin. You did very well considering this is your first year. Very well done. 😊
Now that I am in my early 60's, I truly believe that IF we had known about the amazing benefits of growing our own gardens and the importance of grass-fed, none hormone injected beef that we would be SO much healthier today! All of the processed foods I've consumed over my lifespan have just affirmed how bad those foods are! Type 2 diabetes, heart disease, cancer can all be linked back to what we expose ourselves to, I'm sure! But you're never too old to learn and do better! I plan to start my own garden and choose to eat more organically. Thanks for sharing!

Your veggies are gorgeous!!! Here’s a tip: the garden is always amazing the first couple years because bad buggies haven’t discovered it. Have bug/mosquito netting ready to cover your crops that don’t need pollination like cruciferous veg, greens, etc. For squash and cucumber family grow them up like over hog panels (not cattle panels they’re not sturdy enough) this way you can keep an eye on the dreaded squash bugs and cucumber beetles. Tomatoes and peppers you just need to keep an eye on them. I grow indeterminate toms over an arbor as well it’s so easy for harvesting and looking out for bugs and worms. You will need PVC pipe the size that allows you to bend it, you can attach them on the inside of the raised beds and lay the netting over that to protect your beautiful garden from bugs that want to destroy it. I also plant basil all over the garden close to veggies this seems to help repel some bugs. Hope this helps for future gardening🍅
Ally- tip from experience: for removing tomato skins before processing for sauces etc: the easiest way is to cut an X on the bottom of tomatoes, freeze them overnight then remove from freezer, let them defrost on counter or in fridge and the skins will peel right off as if you boiled them.
I NEVER remove the skins if I’m canning or freezing sauce. There are good nutrients in skin. The trick is a really good immersion blender or a regular blender that will pulverize it! And growing tomatoes specifically for sauce.
When you talk about the sensation of feeling the potatoes with your bare hands, I feel the same way about the sound of you harvesting the produce. There's a thusness to it that just makes it feel right. Thank you so much for this.

Ally, you’re correct about the potatoes weather permitting of course. Growing up my folks were mad gardeners and had dozens of wooden barrels. We put in a few inches of loam,layered potatoes,carrots,turnips,etc, then covered with another layer of loam. These barrels were small because they got very heavy. They were stored in the basement and lasted all winter. My mom also had over 1k mason jars!!

You had a huge harvest! I store all my harvested veggies in the freezer. If you make the space for storing canned items, I would also put an upright freezer in your home too. Since you have a generator you won't have to worry if the electric goes out. To sort items in my upright freezer I use dishpans marked with PORK BEEF CHICKEN SEAFOOD etc. It helps me know my inventory.
Love all of this gardening, my dad made a green house with plastic instead of glass , for years we started there and than planted in the garden our plants . We canned most of our harvest and we had a root cellar as well . Being poor somehow we felt rich .
I've been canning for just a few years and that's where most of my garden goes. I've canned squash made tomato sauce green beans everything. I grew pink banana squash this year and it was fun watching it . I now have 5 huge squash to figure out what to do with. It can be breads pies whatever. It's like a pumpkin which I have 7 huge in my garden right now. I love growing my own food.😊😊❤
I would suggest doing a Green Tomato Pie filling. Green tomatoes mixed with tart apples, raisins and fall spices is wonderful for Fall and Winter deep dish pies.

Your garden has done amazingly well for its first year! I love my tulsi and lemon balm also! My dehydrator runs almost full time through the summer. I never buy tea bags anymore, love my fresh tea leaves that I grew myself.

You should look into lacto-fermentation..things like plums, peaches, corn, etc..super beneficial to the gut, and super fun to do.
