This guy does seem to have some skill in reading emotions, but on top of that, rolling a 20 means he senses that Don's entire manner is a fascade, and Don gets a grim reminder of that fact as well, from what he said next. However, his nat 20 didn't quite let him see what's BEHIND the fascade...

Coming back to this comment I think the reason we all missed this is because we just wrote it off as a haha funny moment and for a lot of us this was our first project moon game. Another comment under this video pointed out that Don acts the way she does as a means of cope. A lot like Erza from Distortion Detective and a certain grade 9 fixer with his phrase “this is this and that is that”.
I’m surprised people “missed” it rather than just not finding it as something significant enough to comment upon. I mean, it only leads into the idea of Don’s hidden depths and that she has a facade on. I at least didn’t find that as some particularly deep revelation, it was just some character development.

That novel ends with Don Quixote finally renouncing this name and using his real name Alonso Quixano after realizing the foolishness of his dream. It's also a parody comedy where Don Quixote basically acts as a force of chaos to the lives of everyone involved much like Limbus' Don. And Limbus company is basically a retelling/reinterpretation of the different novels the Sinners are based upon... Knowing the plot of the source novels really helps in guessing the story of each character.
I saw a theory some time ago that the "Don Quixote" that we see in limbus company isn't the real Don Quixote but rather, Sancho. The fact that in the source Don Quixote isn't his real name anyways and the fact that the Don we know has this secret, deep voice might indicate that this theory might acctually be right.

If we take a look at the overall theme of the story, about the foolhardiness of ignoring reality and it's complexities, that put it above any form of fiction, I always assumed Don's whole deal would move along the same path. The city is already really f*cked up, so I can see Don putting on this hero act as both a genuine attempt to reach the Sueño Imposible (impossible dream) of becoming a true hero of justice, and as a shield to protect her psyche from the reality of the world she lives in. Her obsession with fixers could be tied to hey back story in the sense that she might've been saved by some in the past. Considering the fact that they're the closest thing to a hero in the city (and even then they're pretty far off.) Looking at her other IDs we see with her Shi section one that she is very competent, but the duty of being a director is very draining on her since she has to deal directly with the reality she tries so hard to ignore in base reality. I'm honestly pretty excited to see how she'll develop once we reach her canto, however long that'll take.

I take it she is either modeling herself to be like the real Don or she is somehow bound to take over the persona. Based on her Base EGO artwork, my guess is she either experienced something horrible and so she adopted a superhero persona named Don Quixote… or she sees the world as lawless and no sense of direction or purpose, so she gave herself a purpose by living a delusional empty fantasy. This interaction makes it seem like she takes offense to the mariachi saying “anyone who does anything without a pure heart is a phony.” And she takes it personally. It should be noted that the original Korean translation says something along the lines of “not being sincere to yourself makes you a phony.” This is a bit of a stretch but I wouldn’t be surprised if Don Quixote isn’t even her real name. She fits the persona of Sancho much more. It fits the naming of her Ego too. (Based on the horse skeleton. It seems to signify something beautiful and majestic that been stripped of what makes it beautiful. An empty carcass of something supposed to be fantastical and complete, or an incomplete imitation.)

This is a bit of a stretch but I wouldn’t be surprised if Don Quixote isn’t even her real name. She fits the persona of Sancho much more. It fits the naming of her Ego too.

The theories I have about Don Quixote that I have noted down here it is:
-Might have a past that she wants to deeply hide in her heart, most likely a regret of her action.
-Uses her energetic personality as a cope mechanism to try to not be the sinner she is, as referenced by the sign in her EGO that has all Sins colors in order that says "Mountains are Mountains, Waters are Waters", which could be referencing that "Sinner is a Sinner" with her glancing into a false happiness and negating that fact by pretending that she isn't one, due this proverb:
“Before one studies Zen, mountains are mountains and waters are waters; after a first glimpse into the truth of Zen, mountains are no longer mountains and waters are no longer waters; after enlightenment, mountains are once again mountains and waters once again waters.” ― Dōgen
-Her chapter is very likely to be about her fighting against her past and having to accept who she really is and what she has done.
-The leather in her boots might have been from the actual Rocinante, which is referenced to as a horse skeleton in her personal EGO.
-Her weapon in her EGO could have been tailored with the blood of Sancho.
-She might have been part of a syndicate in the past, when she had colleagues to assist her.
-Might have accepted to work to the LCB with the terms that they help her resolve her past or help her cope with it somehow with the Golden Bough. Memory wipe is a possible offer.
Her not being herself as a cope mechanism, trying to deny who she truly is, trying to deny her Sin and that she is a Sinner, only to later accept that she is truly a Sinner no matter what is something that has lot of evidence and hints. Her trying to be a perfect hero in a world where she is a Sinner is also proven to be an "Impossible dream" as it is named on her lance.
Update: With the new cutscene, we came to learn that their personal EGO pages are actually their rooms on the bus, this reinforces a theory that I had early but didn't had much relevence due me thinking it doesn't add anything to her past that is of the paintings on her room are given by the sinners to her (with the exception being the carrousel one)
