    Okracommonly known as lady's finger is native to East Africa. Cultivated in tropical, sub tropical in warm temperate regions. It is used in many cuisines of many countries. Today's my recipe is South Indian style based on a sour sauce with dal as a main ingredient. It is best eaten with rice as an accompaniment to any non veg dish. Enjoy !!!

    Ingredients :-

    Serving : 2 - 3 Cooking Time : 15 mins. Preparation time : 15 mins.

    Lady's finger - 200 gms.
    Moong dal - 1/2 cup
    Big onion - 1/2
    Shallots - 5
    Tomatoes - 2
    Carrot - 1/4 diced
    Curry leaves
    Coriander to garnish
    Tamarind extract - 2 tbsp.
    To Temper :-
    Oil - 2 tbsp.
    Urid dal - 1 tbsp
    Mustard seeds - 1/2 tsp
    Cumin seeds - 1/4 tsp
    D. chili - 3 pcs
    Chili powder - 1 tsp
    Cumin powder - 1/2 tsp
    Turmeric powder - 1/4 tsp
    Tamarind extract - 2 tbsp
    Salt to taste
    Coriander to garnish
    Cook the moong dal and set it aside.
    Wash , wipe and cut the lady's finger .
    Pan fry the lady's finger in 1 tsp oil until sliminess is no more. Set it aside.
    Heat oil and add in urid dal, mustard seeds , cumin seeds, dried chili.
    Once urid dal is browned add in sliced big onion and shallots. Once translucent add in the diced carrots.
    Then add in curry leaves and chopped tomatoes.
    Once tomatoes are softened add in the chili powder, cumin powder, turmeric powder and stir to combine.
    Then add in the pan fried lady's finger and stir in a while before adding in the cooked moong dal. Add in tamarind extract and salt to taste.
    Let it boil and simmer a few mins. Garnish with coriander leaves and ready to serve.
