Hi, Katie, I think that something such as piecrust can be finicky and may be more of a science in construction because I have found them to be very exacting. Cookies seem to be very forgiving. ✨Everything that you eat looks good!
I ran a bakery for years and baking is a science but some recipes are more forgiving. I substitute all the time but you can't cheat on certain things, like yeast in a bread recipe for example.

My very favorite kind of sandwich is a Reuben sandwich! Since I am vegetarian, I haven’t found a veggie corned beef option, so I use the Tofurkey brand of veggie smoked turkey, I don’t care for cheese, though it doesn’t seem right without some sort of cheese, so I buy the thinnest provolone cheese, organic sour kraut & Russian or Thousand Islands dressing, and I grill it all on thin sliced seeded rye bread from Publix! I am always up for that sandwich😊
I do believe that we have to stick closer to recipes when baking desserts than with cooking & baking casseroles etc. If I am in doubt & don’t have a particular ingredient when planning to bake cookies or cake, I ask siri to search what I can substitute. But leaving out things like chocolate chips, wouldn’t be a problem. I always leave out the chocolate chips!

I think for a homemade sandwich, my favorite is brioche bread, mayo, deli mustard, pastrami, brown sugar ham, sandwich stuffer pickles, and either sharp cheddar or meunster cheese, lightly toasted. One of my favorites at a shop is Jersey Mike's Big Kahuna chicken (or the big kahuna cheesesteak depending on mood) on rosemary bread with Chipotle mayo 🤤

Subway Tuna w/ American Cheese. Herbs and Cheese Loaf Bread toasted. Add Olives, Green Peppers, Tomatoes, mustard, vinegar and pepper!!!!! Yes ❤️

My favorite sandwich : Turkey,ham +provolone cheese with yellow mustard and diced or sandwich pickles. Sometimes with mayo instead of mustard. Simple and delicious.
Brownies may be an exact science. If you leave out an egg or use the wrong oil or bake them for 30 more seconds than called for,you can end up with inedible bricks. Maybe the idea of a recipe is that it came from someone who already made all the mistakes and ended up with a reliably good method? Maybe.
Favorite Sandwich order is Dutch Crunch Roll, roast beef, mayo, mustard, and lots of shredded lettuce. Cheese is optional for me depending on my mood but if I get it I like Swiss or provolone.

I make chicken salad with canned Swanson chicken breast, best foods real mayo, celery, red onion, dried cranberries, honey, lemon juice chopped walnuts, on a croissant sooo good! Katie I hate bugs of any kind. Anything that crawls, flies, and just any kind of bug. Those cookies look amazingly good. Much love!! P.S. love that tree.
I buy nearly the same vegetarian chicken salad at the market/deli where I shop, that only sells vegetarian products. Of course, they use vegetarian chicken & the only addition to your recipe is chopped raw blanched almonds, which gives it a nice crunch. I love it so much that I can eat it directly out of the container, without putting it on bread. I buy it by the pound to make sandwiches.
Chicken salad is my favorite! I use red grapes instead of cranberries. I love to eat it right out of the bowl!

Gosh I think mine is a good old cheese sandwich. Then a tuna. The cheese is either mayo, mustard, sharp cheese' and lettuce or mayo mustard, sharp cheese and tomatoes toasted! Then the Tina is mayo mustard onions(cant have now ) all if these on sour dow and the tuna has garlic salt or tajin and the same but with cheddar cheese as a melt. Sometimes I add radishes and celery now as I can't have onions raw now.

Baking is a science, it is Chemistry. Doesn't mean you still can have great results if you don't follow the recipe closely. Just because the exact numbers don't matter, doesn't mean it is not a science. :D It is also about how correct you want it to have. If you watch shows like the Great British Bake Off or something you will see it is possible to be really intense about baking.

Omg. We are so much on the same page with everything. It's really kind of crazy weird like. Down to the hand wipes in the car. Usually Lysol. I know they are a little strong. That’s not the part that is the science. It becomes science regarding the leavoning; regarding the fat ratio; the cooking process and temp.
That said there is a lot of wiggle room that you should experiment around to make things to your liking. Different flours make different textures; as do different fats (I often use half shortening and half butter. It’s seriously magic).
It’s always best to follow exact directions and ingredients if u can as a start and branch out from there.
In short; you probably did get lucky with your ingredient changes😂

Ok I've been watching SO MANY Girl With The Dogs grooming vidoes that when I saw that tree at 2 mins and 16 seconds that I thought to myself "that tree is shedding! It needs a good blow out." LOL
