AMAZING Baked Chicken Leg Quarters | Summer style recipe you need to try!

This is one of my favorite ways to make oven baked chicken leg quarters. The recipe is super simple and takes just about hour from start to finish. Since it's using plenty of summer vegetables, now is the right time to try it.
You don't have to use chicken leg quarters exclusively, it works equally great with chicken thighs or drumsticks... but in these inflation times, I'm often buying the whole quarters in order to save some $$$ :)
