Your instrument DOES NOT measure water dew point. It is actually measuring the water content. Then you can use the water content to calculate dew point, based on some assumptions that may or may not be valid. Please be more clear. Definition of water Dew Point: The temperature at which moisture condenses out of the gas phase into liquid phase. The only way to measure dew point is by using a chilled-mirror. Your device is a moisture sensor.
Pressure dew point and dew point are not physical quantities but a relation between temperature and degree of saturation humidity of a gas. You are right in this respect that in a dew point mirror system, the temperature at which condensation (100% relative humidity) occurs in the mirror is measured by cooling the mirror. Thus, only the physical parameter temperature is measured. In order to determine a dew point or pressure dew point, our pressure dew point measuring instruments measure the two variables temperature and humidity. As described in the video, this measuring is carried out by our temperature sensor and polymer sensor. Our sensor calculates the pressure dew point from this two measurements.
