Bak Chor Mee made easy! Simple home recipe for a Singaporean hawker favourite~

  • Bak Chor Mee (肉脞面)
    This is one of the classic dishes that you will invariably find in any hawker centre in Singapore. However, it can be quite difficult to recreate at home or when living abroad. Ingredients such as pork liver, pork balls, pork dumplings etc. are not always readily available, or may take up substantial preparation time.
    My Bak Chor Mee recipe therefore simplifies this hawker favourite by using basic ingredients that will still be able to satisfy those cravings. It's also a healthier and lighter option for those that want to save some calories.

    INGREDIENTS
    Egg noodles
    Minced pork (marinated with white pepper and sesame oil)
    Stock (see A below)
    Stewed mushrooms (see B below)
    Sauce for tossing (see C below)
    Sliced fish cake
    Beansprouts
    Chopped spring onion *for garnishing
    Tang Cai (preserved vegetable) *for garnishing
    A. Stock
    (easy method as demonstrated)
    1 pork cube
    2L water
    bring to a boil
    (traditional method)
    2-3kg pork bones
    3L water
    100g anchovies (ikan bilis)
    2-3 slices ginger
    3-4 cloves crashed garlic
    Run boiling water over pork bones twice, then boil with the rest of the ingredients over medium heat. Once boiling, remove scum and turn down the heat to low and boil for another 1.5 hours.
    B. Stewed Mushroom
    1 cup water
    5-6 big mushroom
    1 tbsp sugar
    1 tbsp Shaoxing wine
    1 tbsp light soy sauce
    2 tbsp oyster sauce
    1 sliced ginger
    2 cloves garlic
    1 tbsp corn starch with 2 tbsp water
    C. Sauce for tossing (1 portion)
    1/2 tsp sesame oil
    1 tbsp light soy sauce
    1 tbsp Chinese black vinegar
    1 tbsp chilli sauce
    1 tbsp tomato ketchup
    2 tbsp stock

    I'm cooking now. I hope it taste good.. I used to live in Singapore but now moved to France for good. We couldn't find the same taste here in Paris. That's why I started cooking our Singapore dish .

    Question...
    What kind of Black Vinegar is good and works? (for making Bak Chor Mee or other noodle-toss-dressings)
    I got regular Chinese ChinKiang black vinegar from the Asian store yesterday. Of course, I couldn’t find any Malaysian nor Singaporean brand vinegars. Will ChinKiang work for Bak Chor Mee?

      Mark L there are 2 types... spicy is with chilli sambal, non spicy will be with ketchup...
