I was always taught that the "ch" sound sounds like the hebrew "ch" sound (like in Chanukah) but my friend, who learned German at her old school, learned the "ch" sound as being more like "sh". She said that they learned a southern dialect, and my school's German sister-school is in a more northern part of Germany, so I assume that that is somehow related to the dialect of German we were taught...so I think he pronounced it acceptably.
Actually, in the German language there are different ways to say "I love you" in a romantic way vs. in a familial/friendly way. "Ich liebe dich" is almost always used to mean "I love you" in a romantic way. To say it in a friendly way would be "Ich habe dich lieb."
@ExplodingOrangePanda No worries! Like I said, it just depends on whereabouts in Germany the person is from. Like in the song "Ich Will" by the German band Rammstein, their singer Till Lindemann pronounces Ich like 'ish'. Not sure what part of Germany he's originally from, though.

Although I could be wrong about which regions say that, but I have met a couple of people from east Berlin who say it more like 'ish'. But even they acknowlege that many Germans pronounce it as 'ick'.
