I love how the first season has that completely out of place 80's feeling, with mafiosi everywhere and no police.

If you look at the seasons, each season gets more and more depressing. The first season shows them thriving and everywhere and each season more of them are killed off to the last season where only a couple of them are left. They even have a color grading that progressively gets darker each season.
That's one of the only criticisms I have of the show (which I loved); they shoot people in broad daylight, all over the place, and not once is there a witness, a security camera, or anything.
It's amazing how two black guys could fit inside the mouth of that fish.

Chucky Signore clearly hadn’t done many hits before. Mikey Palmice was uncle Junior’s terminator until he got his stripes. Chucky froze, either unsure about how much of a coincidence that the guy he was probably planning to take out that very night was right in front of him and Chucky seemed like he was starting at the impressive looking catfish. When you’re in shock, things don’t process as quickly. Last thing Chucky was expecting to come out of the mouth of the fish was a gun. And the rest you know, whatever.
Good thing Junior didn't leave any DNA at the scene.

The luck on this guy - happens to bump into someone he's planning to whack in a nice isolated place with no witnesses, catches a giant fish, and the fish even happens to have a gun in its mouth.

David Chase once said in an interview that whacking Chucky was one of the most difficult scenes for them to film, as they were trying to pull it off in broad daylight in the most obvious way and Tony and Sil kept getting pinched before they could finish the take. Chase himself had to bail them out of jail a total of 7 times before they could finally wrap. It was also especially difficult for them to have to revive Chucky and whack him all over again so many times. He almost quit the show over it but Chase offered him some words of encouragement to hang in there and he would be well compensated for his troubles.
